Zucchini Boats

So I had leftover Spaghetti sauce, and while I loved Eggs in Purgatory, I was wondering what else I could make. I found this on Eat This Not That “18 Delicious Ways to Use Up Leftover Pasta Sauce”.

You can serve it as main dish or side.

Ingredients:

  • 4 Zucchinis
  • Extra-Virgin Olive Oil
  • Pasta Sauce
  • Chopped Tomato
  • Parmesan Cheese
  • Rosemary
  • Thyme
  • Salt
  • Pepper

Directions:

  1. Preheat the oven to 350 degrees F.
  2. Slice the zucchinis in half, lengthwise.
  3. Scoop out the insides with a spoon.
  4. Brush both sides of the zucchinis with olive oil.
  5. Place on a foil lined baking sheet and add some pasta sauce.
  6. Top the sauce with the chopped tomato.
  7. Sprinkle on grated Parmesan cheese, rosemary, thyme, salt, and pepper.
  8. Bake for 15 mins and then broil for the last 3 mins or until the cheese s browned.

Crock-Pot Potato & Kielbasa Chowder

Thoughts Before Cooking:

I love soup. And I love using my crock-pot. I found this on Pinterest.  It originally comes from the Crock-Pot Ladies

Ingredients:

  • 1 Whole Onion, Chopped
  • 1 Clove of Garlic, Minced
  • 32 oz of Chicken Broth
  • 6 Whole Potatoes, Peeled and Diced
  • 2 Cups of Frozen Corn
  • 16 oz of Kielbasa Sausage, sliced into 1/4 inch pieces
  • 1 Whole Bay Leaf
  • 1/2 Teaspoon of Dried Thyme
  • 1/2 Teaspoon of Black Pepper
  • 8 oz of Grated Sharp Cheddar Cheese
  • 1 Cup of Heavy Whipping Cream

Directions:

  1. In a 6-oz crock-pot, add all ingredients except the cream and cheese.
  2. Stir to combine.
  3. Cover and cook on low 8-10 hours or high 5-6 hours, or until the potatoes are tender
  4. Remove the lid and take out the bay leaf and discard.
  5. Add the cheddar cheese and cream to the soup and stir to combine and melt the cheese.
  6. Serve and enjoy.

Delicious.

Garlic and Herb Roasted Potatoes

I pinned this a long time ago and am finally getting around to it. This comes from the McCormick website.

I was just making it for me so I changed a few things around…hope it goes well.

Ingredients:

  • 1 Teaspoon of Oregano Leaves
  • 1 Teaspoon of Paprika
  • 1 Teaspoon of Thyme Leaves
  • 3/4 Teaspoon of Salt
  • 1/2 Teaspoon of Garlic Powder
  • 2 Red Potatoes Quartered, for one I did 2 Yukon Potatoes
  • 2 Tablespoons of Olive Oil

Directions:

  1. Preheat oven to 425 degrees F.
  2. Mix oregano, paprika, thyme, salt, and garlic powder in a small bowl. Set aside.
  3. Toss potatoes with olive oil in a large bowl.
  4. Sprinkle seasonings mixture over potatoes.
  5. Toss to coat well.
  6. Spread potatoes in a single layer on a foil-lined baking pan.
  7. Bake 30-35 mins or until potatoes are tender and golden brown.

Thoughts After Cooking:

I thought they were good but a little dry.

I had to add lots of butter and a bit of pepper.

Harlem Tea Room Cheddar-Thyme Scones

Thoughts Before Cooking:

So this comes from the same magazine that the Harlem Tea Room Baking Powder Scones were in, an old O- the Oprah magazine.

The article gave three versions of the recipe: Baking Powder Scones, Cheddar-Thyme Scones, and Raisin Scones. As I already did the Baking Powder, I thought I would try out the Cheddar-Thyme ones.

Ingredients:

  • 8 Tbsps (1 Stick) of Cold, Unsalted Butter, Cut into Small Pieces, Plus Extra for Baking Sheets

  • 3.5 Cups of All-Purpose Flour, Plus Extra for Later

  • 2 Tsp of Baking Soda

  • 2 Tsp Cream of Tartar

  • 1/2 Tsp of Salt

  • 2 Cups of Grated Cheddar Cheese

  • 1 Tbsp of Fresh Thyme, Chopped

  • 1.5 Cups of Sour Cream or Buttermilk

  • 1 Egg, Beaten, or Milk for Brushing Scones

Directions:

  1. Preheat the Oven to 400 degrees F.

  2. Coat two baking sheets with butter.

  3. Sift flour, baking soda, cream of tartar, and salt into a large bowl.

  4. Add butter, using fingertips to combine until mixture takes on texture of fine cornmeal.

  5. Stir in 1.5 cups of grated Cheddar cheese and 1 Tbsp of chopped fresh Thyme into mixture.

  6. Add sour cream or buttermilk and stir until flour mixture is just moist and dough begins to stick together.

  7. Gather dough into a ball and knead lightly until fully integrated.

  8. Place dough on floured work surface and roll with a floured rolling pin to 3/4 inch thick.

  9. Dip a 2-inch cutter into flour and cut out scones as close to one another as possible.

  10. Place on prepared baking sheets with space in between.

  11. Let stand ten minutes, then brush the tops with egg or milk.

  12. Sprinkle tops with an additional 1/2 cup of Cheddar cheese before baking.

  13. Bake until golden brown, 10-12 mins.

  14. Serve warm with butter, clotted cream, fruit preserves, or jam.

  15. Makes about 1.5 dozens.

Thoughts After Baking:

Were very good. All they need was a bit of butter

However, the thyme took forever. Like an hour to chop, but I made them another time with dried thyme and it wasn’t as good as fresh. It may take a long time, but it is worth it.

Oven-Crispy Creole Seasoned French Fries

With Superbowl Sunday coming up, I decided to share a tasty recipe that is sure to be a hit. I also just want to take this moment to share my support for South Carolina Panthers, go team!

Thoughts Before Baking:

So this recipe comes from this Food Network magazine. In the magazine they call it Emeril Lagasse’s Oven Crispy French Fries with Paprika-Parmesan Salt, but I decided that was too long for a title and renamed them.

I love fries!

And I decided that I would give these slightly healthier ones a try. As I didn’t want to spend money buying creole seasoning when I only need one tablespoon, I decided to make my own. It only cost like 30¢ that way.

Creole Seasoning Ingredients (from Epicurious)

  • 1/3 Cup of Paprika
  • 3 Tablespoons of Dried Oregano
  • 3 Tablespoons of Ground Black Pepper
  • 2 Tablespoons of Dried Basil
  • 2 Tablespoons of Salt
  • 1 Tablespoon of Cayenne Pepper
  • 1 Tablespoon of Granulated Onion
  • 4 Teaspoons of Dried Thyme
  • 4 Teaspoons of Granulated Garlic

Directions:

  1. Mix all the spices together in a bowl.
  2. Store in airtight container for three months.

 

 

French Fry Ingredients:

  • 2 Large Baking Potatoes (about 1.5 lbs), scrubbed well
  • 1/4 Cup of Extra-Virgin Olive Oil
  • 1 Tablespoon of the above Creole Seasoning, Emeril’s Original Essence Seasoning, or other Creole Seasoning
  • Salt
  • 1/2 Cup of grated Parmesan Cheese
  • 1 Tablespoon of Sweet Paprika (I couldn’t find any so I used regular)
  • 1/2 Teaspoon of Garlic Powder
  • 1/4 Teaspoon of Onion Powder

Directions:

  1. Preheat the oven to 425 degrees F
  2. Pat the potatoes dry and cut them lengthwise into 1/2 inch slices. Turn each slice flat and slice again lengthwise into 1/2 inch slices.
  3. Place the potatoes in a large mixing bowl and add olive oil, creole seasoning (or Emeril’s seasoning), and 1/4 a teaspoon of salt.
  4. Toss well to combine.
  5. Transfer the fries to a large baking sheet, arranging them in lines and not allowing any to touch.
  6. Roast the potatoes for 15 mins.
  7. Turn them over and roast another 15 mins or until brown and crispy.
  8. While potatoes are cooking, combine cheese, paprika, garlic powder, onion powder, and 1/2 teaspoon of salt.
  9. When potatoes are crisp and brown, sprinkle with mixture.
  10. Serve Hot.

I thought these fries were really good, but the sheet needs to be greased or else the fries all stick.

I also thought the fries were better without the paprika-parmesan salt. But other than that, they were really delicious.

Italian Wedding Soup

So if you haven’t guessed, Italian Wedding is a type of soup. They used to serve it at Olive Garden, but don’t anymore, of which saddens me as it is one of my favorite soups. But all is not lost, I can make it myself.

So I found this recipe on Pinterest, but it is originally from McCormick.com

Ingredients:

  • 1 Tablespoon of Olive Oil
  • 8 oz of Sweet or Hot Italian Style Turkey Sausage, cut into 1/2 inch thick slices
  • 1/2 Cup of Chopped Onion
  • 1  32-oz Can of Reduced Sodium Chicken Broth
  • 1  15-oz Can of Red Kidney Beans
  • 1  14.5-oz Can of Diced, no salt, Tomatoes
  • 1 Teaspoon of Oregano
  • 1 Teaspoon of Savory
  • 1 Teaspoon of Thyme
  • 1  6-oz package of Baby Spinach Leaves
  • 1/2 Cup of Uncooked Small Pasta

Directions:

  1. Heat oil in pan on medium heat.
  2. Add sausage and cook for three minuets.
  3. Add onion and cook for three minutes, or until meat is browned and onion tender.
  4. Pour meat and onion mixture into a pot.
  5. Add chicken broth.
  6. Drain and rinse red kidney beans, and then add to the pot.
  7. Add tomatoes, oregano, savory, and thyme to the pot.
  8. Stir mixture and bring to a boil.
  9. Reduce heat to low and simmer for 10 minutes.
  10. Stir in spinach and pasta.
  11. Return to boil on medium heat. When boiling, return to simmering on low until pasta noodles are cooked.
