So it is time for our tradition of New Year’s Day breakfast food recipe!

This recipe comes from the adorable Rachel Ray and the Food Network.

Ingredients:

  • 3 Cups of Vanilla Nonfat Yogurt
  • 1 Cup of Defrosted Frozen Strawberries or Juice
  • 1 Pint of Fresh Blackberries, Raspberries, or Blueberries
  • 1 Cup of Good Quality Granola

Directions:

  1. Layer 1/3 of the yogurt in the bottom of 4 tall glasses.
  2. Combine defrosted strawberries and juice with fresh berries.
  3. Alternate layers of fruit and granola with yogurt, until glasses are filled to the top.
  4. Serve immediately to keep granola crunchy.

Strawberries and Cream Oatmeal Smoothie

Do any of you have Something Extra Raley’s Rewards? I do and I love it. Every three months you receive coupons to do with stuff you had bought; and for your birthday get a free cupcake, free box of cake mix, and a free birthday card.

Every now and then they give you a freebie item, and I got a free container of 1 lb of strawberries. I love starwberries, but they were very ripe and needed to be eaten ASAP. So what better way to do it then with a smoothie?

This comes from The Kitchen Paper.

Ingredients:

  • 1 Cup of Frozen Strawberries (I used fresh)
  • 1/2 Cup of Yogurt
  • 3/4 Cup of Milk
  • 1/2 Cup of Uncooked Oatmeal
  • 1 Tsp of Vanilla Extract (optional)
  • Strawberry slices to top the smoothie (optional)
  • Whipped cream (optional)

Directions:

  1. Combine all ingredients in a blender and blend until smooth.
  2. Top with strawberry slices or whipped cream.
  3. Drink immediately.

Blueberry Earl Grey Tea Smoothie

So you know me. I love tea.

There is nothing better than starting your morning, afternoon, evening-or every hour with a wonderful cup of tea.

You may or may not know that I also love smoothies. I get up early every day so it is nice to be able to run out the door and drink my breakfast on the run.

So as I was looking through Pinterest, I found a recipe Berry Colombo Smoothie, from RefuTeaI don’t have Colombo tea, so I had to use a different brand and I didn’t have strawberries, so I had to leave them out. Oh well.

Ingredients:

  • 1 Cup of Frozen Strawberries
  • 1/2 Cup of Frozen Blueberries
  • 1/2 Cup of Greek Yogurt
  • 1/2 Cup of Earl Grey Tea

Directions:

  1. Brew the tea, using 1 tbsp as you need to have the tea be strong.
  2. Blend all together until smooth.

Strawberry Infused Water

So for my birthday last year, a friend of mine bought me a infuser type water bottle. I hadn’t done anything with it for a while, but it’s hot.

 

Ingredients:

  • A Handful of Strawberries
  • Ice
  • Water

Directions:

  1. Slice the strawberries and put them water bottle or pitcher.
  2. Add ice and water; infuse and drink.

Flag Cake

Thoughts Before Baking:

We reviewed a 4th of July mystery on Tuesday and we have another coming Wednesday, on the actual 4th. I thought the best way to celebrate is with a recipe I made a few years back and really enjoyed. I found it in a magazine and it comes from Betty Crocker.

Ingredients:

  • 1 Box of Betty Crocker or Other Yellow Cake Mix
  • 1 1/4 Cups of Water
  • 1/3 Cup of Vegetable Oil
  • 3 Eggs
  • 1 Container of Vanilla Frosting
  • 1/3 Cup of Blueberries
  • 1 Pint of Fresh Strawberries, pits removes and sliced in half

Directions:

  1. Cook cake mix according to box directions..
  2. Cool 10 mins and remove cake from pan.
  3. Cool for an hour.
  4. Place cake on try and frost top and sides.
  5. For flag design, arrange blueberries in the upper left corner to create stars.
  6. Arrange strawberries in rows to create stripes.
  7. Serve immediately. (Store covered in fridge)

I loved this cake and thought it was absolutely delicious. You should add it to however or whichever way you choose to celebrate the festivities.

French Strawberries

So this recipe comes from my sister blog theCatWhoWroteaBlog.wordpress.comNow my big sister blog TheCatWhoWroteaBlog usually does this with all the recipes in one post. I prefer doing one at a time so I won’t be reposting the whole thing.

Ingredients:

  • 4 Cups of Halved Strawberries
  • 3 Tablespoons of Orange Juice Concentrate
  • 1/2 Cup + 2 Tablespoons of Powdered Sugar
  • 1/2 Pint of Whipping Cream
  • 2 Tablespoons Sour Cream
  • 1/8 Teaspoon of Vanilla Extract
  • 1/8- 1/4 Teaspoon of Cinnamon

Directions:

  1. Sprinkle strawberries with orange juice concentrate and 1/2 cup of powdered sugar; stir.
  2. Refrigerate about 90 minutes. Whip cream until soft peaks form.
  3. Stir in 2 tablespoons of powdered sugar, sour cream, vanilla extract, and cinnamon.
  4. Fold chilled strawberries into whipped cream mixture. Serves 4-6.

These strawberries were to die for!

I recommend them to anyone. I wish I had more, I would eat them right now.

Strawberry Milkshake

I can’t find the recipe I used but I can give the essentials. If I ever find the website again I’ll be sure to give them the proper credit.

Ingredients:

  • 1/2 Pound of Fresh Strawberries, hulled and sliced (plus whole strawberries for garnish)
  • 2 Heaping Tablespoons of Sugar
  • 1 Teaspoon of Vanilla Extract
  • 1 Pint of Vanilla Ice-Cream
  • 1/2 Cup of Milk
  • Whipped Cream (optional)

Directions:

  1. Combine ingredients in blender.
  2. Add whole strawberry as a garnish and serve with whipped cream if desired.
  3. Drink & enjoy.

So when I find a recipe that isn’t chocolate, I just have to try it out.

So I know that this pie is a “summer” pie because of the fruit, but I live in CA. We have summer fruit all year long.

Ingredients:

  • 16 oz-(3 Cups) of Fresh, Ripe, Strawberries; washed, hulled, and sliced in half
  • 6-8 oz (1-1 1/3 Cups) of Raspberries; rinsed and set out in a single layer on a towled area
  • 1/3 Cup of Sugar
  • 1 Tablespoon vanilla extract
  • 2-3 Tablespoons of Cornstarch ot white flour
  • 1 egg yolk beaten with 1 tablespoon of water
  • For dough use the one from the Apple Pie Recipe or buy a premade one.

Directions:

  1. Preheat the oven to 400 degrees F.
  2. Make the dough or roll out the premade one in your pie pan.
  3. Combine the berries, sugar, and vanilla.
  4. Add cornstarch or flour and mix gently until blended. Do not break the raspberries.
  5. Fill dough in pie pan.
  6. Cut remaining dough to into ten 3/4 inch strips and create a lattice.
  7. Brush top with egg.
  8. Cook 45-50 mins

My niece wanted to make the pie with me, so instead of doing the crust from my Apple Pie recipe, I decided to buy the a premade one.

I bought the pillsbury dough which did not turn out well. The dough was hard and dry. When I tried to follow the cooking directions,  it almost burned at 40 degrees. And then it tasted disgusting, like plastic.

The pie filling was good, not super sweet but that is okay. However, you need to eat this pie fast. It does not hold up well for the next day.

Happy 4th of July Triple Berry Salad

Happy 4th of July!

Thoughts Before Cooking:

Happy 4th everybody! I don’t know about you all, but where I’m at it is going to be one HOT, HOT, HOT day.

So I was looking for something that would be tasty and cool to eat/cook.

I got this recipe from The Kitchen is My Playground and the original title is Triple Berry Salad with Simple Vanilla Syrup.

Ingredients:

  • 6-8 ounces of Strawberries
  • 6 ounces of Blueberries
  • 6 ounces of Raspberries
  • 1/4 Cup of Sugar
  • 1/4 Cup of Water
  • 1/2 Teaspoon of Vanilla Extract

Directions:

  1. Place sugar and water in small saucepan over medium heat.
  2. Bring mixture to a simmer (there will be small bubbles), and stir until the sugar is dissolved.
  3. Remove from heat and cool for 5 mins.
  4. Stir in vanilla extract.
  5. Chill completely in fridge.
  6. Rinse the berries.
  7. Hull the strawberries and slice into 2-3 pieces.
  8. Place all the berries in one bowl.
  9. Just before serving, drizzle the berries with the vanilla sugar syrup.
  10. Toss gently.
  11. Serve.

Brioche French Toast

I know you all are thinking, what? Valetine’s Day is Sunday. Yes, you are right, but I thought that I would post a great recipe to make for your loved one today, just in case anyone out there needed any ideas.

Ever since I have heard the word “brioche” uttered by Hugh Jackman in Kate & Leopold I have wanted to sample some of my own. I was like yes, give me some.

And later in the film he makes this yummy dish for her breakfast:

I don’t know what it was, but when I looked through this cookbook and I saw Challah or Brioche French Toast, I just heard Hugh Jackman’s voice in my head saying “brioche” with that amazing accent and had to make it.

Of course it is not exact as I am on a budget and can’t get the same things Gwyneth Paltrow can afford to buy

Ingredients:

  • 1 Teaspoon of Vanilla Extract
  • 2 Large Eggs
  • 1 Cup of Milk
  • 1 Loaf of Brioche or Challah Bread
  • 2 Tablespoons of Unsalted Butter
  • 1 Teaspoon of Sugar
  • 1 Banana Peeled, or 1 case of Strawberries
  • Powdered Sugar
  • Maple Syrup

Directions:

  1. In a large bowl, whisk the vanilla and eggs.
  2. Add the milk, and whisk the whole mixture
  3. Melt the butter in a large skillet over medium heat
  4. Dip the bread in the egg mixture and place in the pan.
  5. Sprinkle the top with a little bit of sugar.
  6. Cook for 2 minutes, or until brown, and flip over.
  7. Repeat step 5.
  8. Remove toast to plate and top with fruit and powdered sugar
  9. Add maple syrup and enjoy.

Strawberry Shortcake

Thoughts before cooking:

In Strawberry Shortcake Murder, they give a recipe for Hannah’s shortcake. But like in Chocolate Chip Cookie Murder, I didn’t like the recipe they gave for their titular treat. It just wasn’t how I like my shortcake. So here is recipe my family likes to use.

Ingredients:

  • 3 Boxes of Fresh Strawberries
  • 1-2 Cans of spray Whipped Cream
  • 2 1/4 Cups of All-Purpose Flour
  • 4 Teaspoons of Baking Powder
  • 2 Tablespoons of White Sugar
  • 1/4 Teaspoon of Salt
  • 1/3 Cup of Shortening
  • 1 Beaten Egg
  • 2/3 Cup of Milk
  1. Preheat the oven to 425 degrees Fahrenheit.
  2. Grease and flour one 8-inch round cake pan.
  3. In a medium bowl, combine the flour; baking powder, and salt.
  4. With a pastry blender, cut in the shortening until the mixture resembles coarse crumbs.
  5. Make a well in the center and add the beaten egg and milk.
  6. Stir until combined.
  7. Spread the batter into the prepared pan.
  8. Bake for 15-20 minutes, or until brown.
  9. Let it cool.
  10. Wash and slice your strawberries
  11. Slice cake in half, horizontally, making two layers.
  12. One one layer, place strawberries, covering them with whipped cream, and another layer of strawberries.
  13. Place the second layer of  cake on top of the strawberry/whipped cream. Cover in whipped cream, and top with strawberries.

Thoughts after cooking:

It was my first time making this cake and I loved it. I made for my niece’s birthday, and our only problem was that her birthday party occurred on cake one of the hottest days of the year. The cake melted, but it was so good we ate the whole thing.
