Iron-Rich Black Bean Soup

My mom picked up this cookbook, Eating the Bible: Over 50 Delicious Recipes to Feed Your Body and Nourish Your Soul by Rena Rossner, and it is pretty interesting. Each recipe has a bible lesson/devotion.

This recipe interested me as I was diagnosed as iron deficient an tend to forget to take my [ills as they are disgusting!! I mean seriously, they taste like blood and the taste takes forever to leave your mouth. I feel like a vampire every time-and not in a cool way!

This one goes with the Iron Sharpens Iron scripture and Deuteronomy 8:9

Ingredients:

  • 1 Onion Chopped
  • 4 Cloves of Garlic, Crushed or Minced
  • 1 Tbsp Ground Cumin
  • 2 Tbsps of Oil
  • 2-15oz Cans of Black Beans, Undrained
  • 2.5 of Chicken Broth
  • 1-28oz Can of Stewed Tomatoes, Undrained
  • Sour Cream or Grated Cheddar Cheese for garnish (optional)

Directions:

  1. Saute onion, garlic, and cumin in oil for 3-5 mins.
  2. Add black beans, chicken broth, and tomatoes.
  3. Bring to a boil, then reduce heat to low.
  4. Simmer 30 mins.
  5. Serve with Sour Cream or grated Cheddar Cheese.

Thoughts After Reading:

So when I first made this, I realized that I didn’t have any cumin. Now you can substitute chili powder for cumin, which I thought I had but I ended up accidentally grabbing my cayenne powder instead.

Yes it was a giant mistake:

Now I’m Mexican, I like my food nice and hot but this was too hot. I felt like I was eating lava! My skin and tongue felt like it was melting off. Sour cream didn’t help or milk-nothing.

I have a policy to eat all I make as I don’t want to waste food or money and I did. But I cried every second of it. That food was so painful.

I remade it with the proper ingredients and it was fantastic. I strongly recommend it!

Creamy Sour Cream Lemon Pie

Happy Pi Day

Thoughts Before Baking:

As you see above, today is Pi day so I decided to post a pie recipe.

I’ve made a sour cream lemon pie before, but this is a new recipe. This one comes from The Chunky Chef.

Ingredients

Pie Crust:

  • 2 Cups of All-Purpose Flour
  • 1 Teaspoon of Salt
  • 3/4 Cup of Shortening
  • Ice Water

Filling:

  • 1 Cup of Sugar
  • 4 Tbsp Cornstarch
  • 1 Cup of Milk
  • 2 Lemons Juiced (about 1/2 Cup)
  • 1 Tbsp Lemon Zest
  • 3 Large Egg Yolks, Lightly Beaten
  • 4 Tbsp Cold Butter, Cubed
  • 1 Cup of Sour Cream
  • Whipped Cream (Optional)
  • Lemon Slices (Optional)

Directions:

  1. In a mixing bowl, mix up the shortening and flour. Add in water a tablespoon at a time until dough is more malleable. If you add to much and it is too liquid-y, then just add a bit more flour to firm it up.
  2. Line crust with foil and place beans, rice, or pie weights (as pie dough will rise) and bake for 8 mins or until browned. Set aside to cool.
  3. In a heavy bottomed saucepan, add sugar and cornstarch. Whisk to combine.
  4. Slowly whisk in milk and lemon juice.
  5. Heat over medium heat, stirring often, until mixture is thickened and bubbly.
  6. Reduce to low, and cook 2 mins longer, stirring often.
  7. Remove from heat.
  8. Lightly beat eggs in a small mixing bowl. Whisking continuously, add a small amount of the hot lemon mixture, then add the mixture to the hot saucepan.
  9. Heat pan on medium heat until it comes to a gentle boil, and cook for 2 minutes.
  10. Remove from heat again and add lemon zest.
  11. Continue to cool, but don’t stir.
  12. Cool mixture for 30-40 mins and then fold in sour cream until no white streaks remain.
  13. Spoon mixture into the pie crust and spread out evenly.
  14. Cool in the refrigerator for 4 hours (or more). To serve, top with whipped cream and lemon slices.

Thoughts After Baking:

I made this for Thanksgiving last year and it was sooooo good! It was eaten immediately. I only got one slice! 😦

Mock Clotted Cream

So I have made a few different scone recipes these past few years as you all know I love tea time.

And almost every time I make them all I can think is “I really wish I had some clotted cream to go with it.”

So that’s easy, just go to the store and buy it.

You cannot purchase it anywhere that I live. So after yearning and yearning for it, I decided to make my own.

This recipe comes from Genius Kitchen by Julie Bs Hive

Ingredients:

  • 1/2 Cup of Sour Cream (Can substitute with Plain Greek Yogurt)
  • 1/2 Teaspoon of Pure Vanilla Extract
  • 1/2 Cup of Heavy Cream
  • 2 Tablespoons of Confectioner’s Sugar (Powdered Sugar)

Directions:

  1. Fold vanilla into sour cream (or yogurt).
  2. Beat heavy cream until stiff peaks form.
  3. Fold the sugar into the cream.
  4. Fold this mixture into the vanilla/sour cream (yogurt) mixture.

Thoughts After Baking:

This was fantastic!

It was so good, I didn’t want to stop.

Fries Quatro Queso Dos Fritos

So who here loves the show Psych?

I love this show. I love the mystery, comedy, parody, and looking at all the yummy food they eat.

One particular thing they mention on the show that has gained a lot of buzz was Fries Quatro Queso Dos Fritos.

This is from season three, episode fourteen Truer Lies. After it aired it caused quite a stir as it sounded so good people wanted to try it for themselves.

Unfortunately, there is no recipe for it.

But that didn’t stop me and my friend. We wanted to make it and watch the Psych film, so we decided to try out the recipe from Binging with Babish. However, Babish doesn’t cover everything so Genius Kitchen and The Kitchn had to help me fill in the blanks. He also cubes his cheese, but I’ve discovered that shredded works out much better

Ingredients:

  • 3 Russet Potatoes
  • Olive Oil
  • Bacon
  • 2-3 Tablespoons of Butter
  • 3 Eggs
  • Salt
  • Pepper
  • Flour
  • 1.5 Cup of Shredded Cheddar Cheese
  • 1.5 Cup of Shredded Mozzarella Cheese
  • 1.5 Cup of Shredded Smoked Gouda
  • 1.5 Cup of Shredded Monterey Jack
  • Bread Crumbs
  • 1.5 Cup of Sour Cream
  • Ancho Chile Powder to taste

Directions:

  1. Preheat the oven to 450 degrees F.
  2. Scrub the potatoes clean and remove any blemishes.
  3. Rub the potatoes with olive oil and use a fork to prick them with holes.
  4. Cook for 50-60 minutes, turning them over every 20 minutes. When potatoes are finished remove pan from oven. (Potatoes are done when the skins are dry and the insides feel completely soft when pierced.)
  5. We want as little moisture as possible, so as soon as you remove the potatoes slice them in half and let cool for 15-20 minutes.
  6. Turn the oven down to 400 degrees F.
  7. Place a sheet of parchment paper on a baking sheet and lay out a few strips of bacon.
  8. Bake the bacon for 15-20 minutes, or until crispy. Remove from oven, drain on paper towels, and set aside.
  9. Run them through a potato ricer. If you do not have a potato ricer, scoop the insides of the potatoes into a bowl, add 2-3 tablespoons of butter, and use a potato masher.
  10. Add an egg and sprinkle with salt. Mix together. If mixture is too soft to handle, add some flour to firm it up.
  11. Cover with plastic wrap and chill for 30 mins.
  12. Mix cheeses into one bowl.
  13. Lay out three bowls. In the first place one cup of flour, in the second two eggs, and in the third one cup of bread crumbs.
  14. Take the mashed potato mixture and firm into a ball. Fill it with the cheese mixture.
  15. Roll ball into flour, then eggs, and then bread crumbs.
  16. Repeat until all the potato mixture is used.
  17. Deep fry at 350 degrees F for 5-7 minutes.
  18. Sprinkle the Fries Quatro Queso Dos Fritos with salt.
  19. Scoop out the sour cream and place in a bowl.
  20. Add the chile powder and stir it in.
  21. Pour the chile powder and sour cream mixture on a plate.
  22. Chop bacon into small pieces and sprinkle on the chile powder and sour cream.
  23. Stack Fries Quatro Queso Dos Fritos on top of each other.
  24. Eat, dipping potatoes in the sour cream mixture.

It was delicious!

The only thing I would change is, as I said earlier, doing shredded cheese over cubed. It makes sure you get the most out of it. Other wise I loved them!

French Strawberries

Ingredients:

  • 4 Cups of Halved Strawberries
  • 3 Tablespoons of Orange Juice Concentrate
  • 1/2 Cup + 2 Tablespoons of Powdered Sugar
  • 1/2 Pint of Whipping Cream
  • 2 Tablespoons Sour Cream
  • 1/8 Teaspoon of Vanilla Extract
  • 1/8- 1/4 Teaspoon of Cinnamon

Directions:

  1. Sprinkle strawberries with orange juice concentrate and 1/2 cup of powdered sugar; stir.
  2. Refrigerate about 90 minutes. Whip cream until soft peaks form.
  3. Stir in 2 tablespoons of powdered sugar, sour cream, vanilla extract, and cinnamon.
  4. Fold chilled strawberries into whipped cream mixture. Serves 4-6.

These strawberries were to die for!

I recommend them to anyone. I wish I had more, I would eat them right now.

Green Goddess Salad Dressing

So my work sent me to table at a Baby fair, and when I went on break I checked out the WIC table which was giving out free salad with your choice of toppings and dressings.

When they showed me the different salad dressings, I grabbed the one with basil in it as we all know how much I love basil.

Ingredients:

  • 1 Cup of Mayonnaise or Plain Greek Yogurt (I don’t like mayonnaise)
  • 1 Cup of Chopped Green Onions (About 7 stalks)
  • 1 Cup of Fresh Basil Leaves
  • 1/4 Cup of Lemon Juice
  • 2 Teaspoons of Chopped Garlic
  • 2 Teaspoons of Worcestershire Sauce
  • 1 Teaspoon of Black Ground Pepper
  • 1 Cup of Sour Cream

Directions:

  1. Blend all the ingredients, except the sour cream, in a blender until smooth.
  2. Then add the sour cream.
  3. Refrigerate

Thoughts After Cooking:

I loved it! I thought it was so delicious that I couldn’t stop eating the salad.

I forgot to take a picture, but it comes out a pretty green color and is just great on whatever salad or sandwich you put it on.

Crazy Cantina Chili

So today is:

As I am part Mexican, this is a holiday I celebrate every year. I haven’t posted anything for this day yet as haven’t made anything that would be perfect for any Cinco de Mayo celebration. But today I have something:

Chili

Thoughts Before Cooking:

So a friend of mine entered me in a chili competition and I was at a loss of what to do. I’ve never really cooked chili, but then I decided to do a recipe from The Star Wars Cookbook:Wookie Cookies and Other Galactic Recipes by Robin Davis.

Ingredients:

  • 1 16-0z Can of Kidney Beans
  • 1 16-oz Can of Black Beans
  • 1 16-oz Can of Garbanzo Beans
  • 1/2  a Large Onion
  • 2 Tablespoons of Vegetable Oil
  • 2 Tablespoons of Chili Powder
  • 1/8 Teaspoon of Cayenne Pepper
  • 1 28-oz Can of Crushed Tomatoes with Juice (I used the Diced Tomatoes with Chiles as I like my food HOT!)
  • 1 Cup of Tomato Juice
  • 1 lb of Ground Beef or Turkey (Optional)
  • Salt and Pepper to Taste
  • Shredded Cheddar Cheese
  • Sour Cream or Plain Yogurt

Directions for Vegetarian Chili:

  1. Open the cans of beans. Drain off the liquid from the cans in the sink. Rinse and set aside.
  2. Chop the onion and set aside.
  3. Put the oil in a large saucepan and set the pan on medium heat.
  4. When the oil is hot, add the chopped onions and stir with a wooden spoon until tender, about 5 minutes.
  5. Add the chili powder and cayenne pepper and stir for 30 seconds.
  6. Add the beans, tomatoes, tomato juice; and stir well.
  7. Reduce heat to medium low and simmer for 15 minutes, stirring occasionally.
  8. Season to taste with salt and pepper.
  9. Serve Chili with cheese and/or sour cream

Directions for Meat Chili:

  1. Cook meat in a pan on the stove.
  2. Follow the directions above, adding the meat during step 7.

Thoughts After Cooking:

I thought the original recipe was good, but wasn’t as hot as I liked it so I added the chiles. I also included meat as I thought it would be more appealing.

I didn’t win the contest, but I had fun trying.

Herbed Eggs with Sour Cream

Ingredients:

  • 6 Large Eggs
  • 6 Tablespoons of Sour Cream
  • 1 Tablespoon of All-Purpose Flour
  • 1/4 Teaspoon of Salt
  • 1/8 Teaspoon of Pepper
  • 1/2 Teaspoon of Fresh Chives
  • Butter
  • Sour Cream and Chives for garnish (optional)

Directions:

  1. Preheat the oven at 400°.
  2. Whisk the eggs in a mixing bowl.
  3. Add in the sour cream, flour, salt, pepper, and chives. Whisk briskly.
  4. Pour into a 1-quart buttered baking ramekin (if you don’t have a ramekin use a 1-quart round dish that can be placed in the oven).
  5. Bake for 15-18 minutes or until eggs reach preferred degree of doneness.
  6. Garnish with a dollop of sour cream and an extra sprinkle of chives if desired. Serves 2-4.

The egg was very good, and we all enjoyed it as a breakfast or dinner food.

It says it serves 2-4, but unless you have multiple side dishes it really serves 2. If you have more people, I would think of preparing two dishes or doubling the recipe. But very cheap and easy to make.

Valentine’s Day is coming so I thought I would post a sweet treat for you to share with your loved one(s)

So I wanted some pie and went to this ’50s diner that makes some really good stuff.

They didn’t have the type I wanted so I decided to try out the Blueberry Sour Cream Pie. I loved it so much I decided to try and make it myself.

This recipe comes from Belle’s Kitchenbut I used the pie crust from my apple pie. Make sure to read the recipe all the way through before baking.

Ingredients:

Pie Crust:

  • 2 Cups of All-Purpose Flour
  • 1 Teaspoon of Salt
  • 3/4 Cup of Shortening
  • Ice Water

Directions:

  1. Preheat oven to 400 degrees F.
  2. In a mixing bowl, mix up the shortening and flour.
  3. Add in water a tablespoon at a time until dough is more malleable. If you add to much and it is to liquid-y, then just add a bit more flour to firm it up.
  4. Put dough aside.
  5. Take a cutting board and put a little flour on the surface, rubbing it. Rub flour on your rolling pin as well.
  6. Place the dough down and roll it into a large circle.
  7. Place the dough in a cake pan or pie pan.
  8. Cover the edges of the pie crust with foil. This will keep the edges from getting too brown.

Filling:

  • 3/4 Cup of Sugar
  • 2 Tablespoons of Flour
  • 1 Cup of Sour Cream
  • 1 Egg
  • 1.5 Teaspoons of Vanilla Extract
  • 1/4 Teaspoon of Salt
  • 2.5 Blueberries, fresh or frozen (if frozen, thaw and drain well.)

Directions:

  1. Combine sugar and flour in the medium sized-mixing bowl.
  2. Beat in sour cream, egg, vanilla, and salt over medium speed for about five minutes.
  3. Carefully fold in the blueberries.
  4. Pour batter into pie crust and bake for 30 minutes.

Topping:

  • 3 Tablespoons of Flour
  • 2 Tablespoons of Sugar
  • 1.5 Tablespoons of Butter

Directions:

  1. While pie is baking, prepare the topping by crumbling together the flour, sugar, and butter with a fork.
  2. Return to the oven and bake for 10-15 more minutes until topping is golden.
  3. Remove from oven and allow to cool throughly before slicing. Enjoy!

Harlem Tea Room Cheddar-Thyme Scones

Thoughts Before Cooking:

So this comes from the same magazine that the Harlem Tea Room Baking Powder Scones were in, an old O- the Oprah magazine.

The article gave three versions of the recipe: Baking Powder Scones, Cheddar-Thyme Scones, and Raisin Scones. As I already did the Baking Powder, I thought I would try out the Cheddar-Thyme ones.

Ingredients:

  • 8 Tbsps (1 Stick) of Cold, Unsalted Butter, Cut into Small Pieces, Plus Extra for Baking Sheets

  • 3.5 Cups of All-Purpose Flour, Plus Extra for Later

  • 2 Tsp of Baking Soda

  • 2 Tsp Cream of Tartar

  • 1/2 Tsp of Salt

  • 2 Cups of Grated Cheddar Cheese

  • 1 Tbsp of Fresh Thyme, Chopped

  • 1.5 Cups of Sour Cream or Buttermilk

  • 1 Egg, Beaten, or Milk for Brushing Scones

Directions:

  1. Preheat the Oven to 400 degrees F.

  2. Coat two baking sheets with butter.

  3. Sift flour, baking soda, cream of tartar, and salt into a large bowl.

  4. Add butter, using fingertips to combine until mixture takes on texture of fine cornmeal.

  5. Stir in 1.5 cups of grated Cheddar cheese and 1 Tbsp of chopped fresh Thyme into mixture.

  6. Add sour cream or buttermilk and stir until flour mixture is just moist and dough begins to stick together.

  7. Gather dough into a ball and knead lightly until fully integrated.

  8. Place dough on floured work surface and roll with a floured rolling pin to 3/4 inch thick.

  9. Dip a 2-inch cutter into flour and cut out scones as close to one another as possible.

  10. Place on prepared baking sheets with space in between.

  11. Let stand ten minutes, then brush the tops with egg or milk.

  12. Sprinkle tops with an additional 1/2 cup of Cheddar cheese before baking.

  13. Bake until golden brown, 10-12 mins.

  14. Serve warm with butter, clotted cream, fruit preserves, or jam.

  15. Makes about 1.5 dozens.

Were very good. All they need was a bit of butter

However, the thyme took forever. Like an hour to chop, but I made them another time with dried thyme and it wasn’t as good as fresh. It may take a long time, but it is worth it.

Sour Cream Lemon Pie

Thoughts Before Baking:

As you see above, today is Pi day so I decided to make a pie. I’ve been wanting to make a lemon pie, but was looking for something other than lemon meringue, as I’m not a huge fan of meringue. So I looked around on pinterest until I found this one. I had never had it before, but thought why not test it out?

The recipe comes from allrecipes.com for the crust and Bunny’s Warm Oven for the pie filling.

Graham Cracker Crust

Ingredients:

  • 1.5 Cups of Finely Ground Graham Crackers (~9 crackers)
  • 1/3 Cup of White Sugar
  • 6 Tablespoons of Butter, Melted

Directions:

  1. Mix the graham cracker crumbs, sugar, and butter.
  2. Press mixture into an 8 or 9 inch pie pan.
  3. Bake at 375 degrees F for 7 mins. Cool.

 

Sour Cream Lemon Pie Filling

Ingredients:

  • One 9 inch Pie Shell Baked, or 9 inch Graham Cracker Crust
  • 1 Cup of Sugar
  • 3.5 Tablespoons of Cornstarch
  • 1 Tablespoon of Lemon Zest
  • 1/2 Cup of Lemon Juice
  • 3 Egg Yolks, slightly beaten
  • 1 Cup of Milk
  • 1/4 Cup of Butter
  • 1 Cup of Sour Cream
  • Whipped Cream for Garnish

Directions:

  1. Combine sugar, cornstarch, lemon zest, lemon juice, beaten egg yolks, and milk in a heavy duty metal saucepan.
  2. Stir.
  3. Cook the ingredients on medium heat, stirring constantly, until filling thickens. This takes about 10 mins.
  4. The filling will thicken and then boil. As soon as it boils remove from heat and add the butter.
  5. Stir until butter is well incorporated.
  6. Let it cool for 10 mins in the pan and then add the sour cream.
  7. Stir until incorporated.
  8. Pour filling into baked pie shell.
  9. Refrigerate until firm, about 3 hours.
  10. Garnish with whipped cream and serve.

Thoughts After Reading:

The graham cracker crust didn’t come out right, it just fell apart. I think the next time I make it I would do a regular crust.

The filling was amazing, it was very thick and rich. Although I felt the whipped cream on top was overkill and it was better without.

Cocoa M&M Cookies

So I don’t know how your guy’s Valentine’s Day went, but this is typically mine.

Thoughts Before Baking:

So this recipe comes from the Hershey Cocoa Cookbook, published in 1979. Oh yeah it’s an oldie but a goodie. I’ve been making these for years and I just love this cookie.

I especially like to make these either right after Christmas or Valentine’s Day as the M&M packages are all on sale for 80¢ or less.

Ingredients:

  • 2/3 Cup of Shortening
  • 1.5 Cups of Sugar
  • 2 Eggs
  • 2/3 Cup of Dairy Sour Cream
  • 1 Teaspoon of Vanilla Extract
  • 2 Cups of Unsifted All-Purpose Flour
  • 1/2 Cup of Hershey’s Cocoa
  • 1/2 Teaspoon of Baking Soda
  • 1/2 Teaspoon of Salt
  • 2 Cups of M&Ms

Directions:

  1. Cream shortening and sugar in a large mixing bowl.
  2. Add eggs, sour cream, and vanilla; beat well.
  3. Combine flour, cocoa, baking soda, and salt; blend into creamed mixture.
  4. Stir in M&Ms.
  5. Drop them by the tablespoonful onto a lightly greased cookie sheet, cool on wire rack.

Thoughts After Baking:

Sorry for no picture, but these cookies do not photograph well. But that doesn’t matter as they taste delicious!!!!
