Individual Vegetable Terrines with a Spicy Tomato Sauce

So I was shelving book in the library and saw this cookbook Vegetarian: Tasty Recipes for Every Day, by Helen Aitken, and was just captured by that image on the cover. I had to check it out and make it for myself

Ingredients:

Vegetable Terrines

  • 1/2 Cup of Oil
  • 2 Zucchini, Sliced on the Diagonal
  • 1 lb Eggplant, Sliced
  • 1 Small Fennel Bulb, Sliced
  • 10 oz of Ricotta Cheese (I don’t like Ricotta so I use Cottage Cheese)
  • 2 oz of Parmesan Cheese, Grated
  • 1 Tablespoon of Fresh Flat-leaf Parsley
  • 1 Tablespoon of Chopped Fresh Chives
  • 1 Red Bell Pepper, Grilled, and cut into large pieces
  • 1 Yellow Bell Pepper, Grilled, and cut into large pieces

Spicy Tomato Sauce

  • 1 Tablespoon of Oil
  • 1 Onion, finely chopped
  • 2 Cloves of Garlic, crushed
  • 1 Red Chili, seeded and chopped
  • 14 oz Can of Chopped Tomatoes
  • 2 Tablespoons of Tomato Paste

Directions:

Vegetable Terrines

  1. Heat 1 tablespoon of oil in a large frying pan. Cook the vegetables in separate batches on high heat for 5 mins, or until golden, adding oil if needed.
  2. Drain vegetables separately on paper towels.
  3. Preheat the oven to 400 degrees F.
  4. Place the cheeses and herbs in a small bowl and mix together.
  5. Lightly grease four 1 1/4 cup ramekins and line with baking paper.
  6. Using half the eggplant, put a layer in the base of each dish.
  7. Layer with zucchini, bell pepper, cheese mixture, fennel and onion over the eggplant.
  8. Cover with the remaining eggplant and press down firmly.
  9. Bake for 10-15 mins or until hot.
  10. Leave for 5 minutes before turning out.

Spicy Tomato Sauce

  1. Heat oil in a saucepan and cook the onion and garlic for 2-3 mins or until soft.
  2. Ass the chili, tomato, and tomato paste and simmer for 5 mins or until thick and pulpy.
  3. Purée in a food processor.
  4. Return to the saucepan and keep warm.
  5. Spoon over the terrines.

Thoughts After Reading:

This was sooooooooooooooooooo good that I ate it all instantly and forgot to take a pic. I strongly recommend it! Like I am serious, words cannot describe how delicious this was.

And if in a time crunch, you can substitute the spicy sauce for pasta sauce.

Iron-Rich Black Bean Soup

My mom picked up this cookbook, Eating the Bible: Over 50 Delicious Recipes to Feed Your Body and Nourish Your Soul by Rena Rossner, and it is pretty interesting. Each recipe has a bible lesson/devotion.

This recipe interested me as I was diagnosed as iron deficient an tend to forget to take my [ills as they are disgusting!! I mean seriously, they taste like blood and the taste takes forever to leave your mouth. I feel like a vampire every time-and not in a cool way!

This one goes with the Iron Sharpens Iron scripture and Deuteronomy 8:9

Ingredients:

  • 1 Onion Chopped
  • 4 Cloves of Garlic, Crushed or Minced
  • 1 Tbsp Ground Cumin
  • 2 Tbsps of Oil
  • 2-15oz Cans of Black Beans, Undrained
  • 2.5 of Chicken Broth
  • 1-28oz Can of Stewed Tomatoes, Undrained
  • Sour Cream or Grated Cheddar Cheese for garnish (optional)

Directions:

  1. Saute onion, garlic, and cumin in oil for 3-5 mins.
  2. Add black beans, chicken broth, and tomatoes.
  3. Bring to a boil, then reduce heat to low.
  4. Simmer 30 mins.
  5. Serve with Sour Cream or grated Cheddar Cheese.

Thoughts After Reading:

So when I first made this, I realized that I didn’t have any cumin. Now you can substitute chili powder for cumin, which I thought I had but I ended up accidentally grabbing my cayenne powder instead.

Yes it was a giant mistake:

Now I’m Mexican, I like my food nice and hot but this was too hot. I felt like I was eating lava! My skin and tongue felt like it was melting off. Sour cream didn’t help or milk-nothing.

I have a policy to eat all I make as I don’t want to waste food or money and I did. But I cried every second of it. That food was so painful.

I remade it with the proper ingredients and it was fantastic. I strongly recommend it!

Frijoles Moledos y Fritos (Refried Beans)

I know I posted on Friday, but you know me! I can’t resist posting on a holiday!

So this recipe came from a Mexican cookbook was given to my mom by my abuela, and she passed it on to me. It has a great and easy recipe for refried beans. All you need is cooked pinto beans, such as the ones from Slow Cooker Pinto Beans recipe.

Ingredients:

  • 2 Cups of Cooked Pinto Beans
  • 2 Tsp of Oil
  • 1 Tbsp of Chopped Onion
  • 1 Crushed Garlic Clove or 1/2 Tsp of Minced Garlic
  • Pinch of Salt
  • 3/4 Cup of Shredded Cheese

Directions:

  1. Heat oil and add beans.
  2. Mash beans thoroughly, add a little water, garlic, onion, and salt.
  3. Cook beans until they are well heated.
  4. Add cheese and cook until it melts completely.
  5. Serve hot as a side dish or as a dip.

Arroz (Mexican Rice)

So Cinco de Mayo is coming, and to get you all ready for the holiday I am going to share with you how to make authentic Mexican Rice.

I know it technically is called Spanish Rice, but I’ve been calling it Mexican Rice ever since I was a child. It made sense to me, my mom is Mexican and making Mexican Rice.

Ingredients:

  • 3 Tbsp of Oil (Safflower, Canola, etc)
  • 2 Cups of Water
  • 1 Cup of Rice
  • Small Amount of Onion, Sliced
  • 1 Bouillon Cube of Chicken Stock
  • 6-oz Can of Tomato Sauce
  • 1 Tsp Chili Powder or Cumin

Directions:

  1. Pour oil into pot, and rotate pot so bottom of pan is covered in oil.
  2. Cook onions in oil until tender.
  3. Toss in rice, water, chicken stock, chili powder or cumin.
  4. Put in enough tomato sauce for “color”-(my grandma would always say this. There is no exact measurement, just put in enough to give it a nice orange color.)
  5. Cook rice over medium heat, covered, stirring from time to time to keep from sticking.
  6. Cook until water has disappeared and rice is tender.

Happy Cinco de Mayo! I thought this would be the perfect time to share this recipe! It comes from McCormick

Ingredients:

  • Chicken Breasts or Chicken Thighs Cut into 1/2 inch thick strips
  • Onion, Sliced
  • 1 Bell Pepper, sliced into thin strips
  • 1/4 Cup of Water
  • 1 Package of McCormick Fajita Mix
  • Flour Tortillas
  • Oil

Directions:

  1. Heat 1 tablespoon of the oil in large skillet on medium-high heat.
  2. Add chicken; cook and stir 3 minutes or until lightly browned. Remove from skillet.
  3. Heat remaining 1 tablespoon oil in same skillet. Add onion and bell pepper; cook until soft, about3 to 5 minutes.
  4. Return chicken to skillet.
  5. Add water and Seasoning Mix; cook and stir 3 minutes or until heated through.
  6. Warm up tortillas on comal.
  7. Serve chicken and veggies together, with tortillas on the side.

Chilaquiles

Thoughts Before Cooking:

This is a recipe my mom used to make whenever she had a surplus of tortillas and wanted something easy to cook. My grandma used to make it when my mom was growing up wjen they weren’t able to afford meat. My grandma and mom used to call it Mexican lasagna as the way you put it together is similar.

Ingredients:

  • 1 lb of Ground Beef or Turkey
  • About a Dozen Corn Tortillas
  • Red Chile Sauce ( Make your own or buy a can. I use Las Palmas brand)
  • Shredded Cheddar Cheese
  • Oil

Directions:

  1. Heat up a little oil in a small pan.
  2. Cut the tortillas into triangle shapes.
  3. Fry the tortillas lightly, just enough so they are firm but not so much as they become chips.
  4. In a separate pan cook the meat.
  5. When both are finished cooking, take out a 9×13 casserole dish. Spoon some sauce into the dish, just a thin amount to cover the pan.
  6. Lay the tortillas in the dish, covering the bottom.
  7. Add meat, sauce, and cheese.
  8. Continue to layer with tortillas, meat, sauce and cheese until dish is full.
  9. Cook at 350 degrees F, until cheese is melted.
  10. Serve.

I love this recipe and love making it!

It is cheap, easy, and delicious.

What to Do When You Run Out of Cupcake Liners

I was making Breakfast Puffin Muffins the other day, when I realized I ran out of cupcake liners!

I wasn’t sure what to do!

Then I scoured the internet until I found a hack I could do with what I had.

If you run out of cupcake liners you can do three things. 1) Spray the pan with non-stick cooking spray.

2) Line the pan with parchment paper.

 

3) Get a paper towel and wet in melted butter or oil. Wipe the pan with it, making sure to heavily oil the molds.

So it is time for our tradition of New Year’s Day breakfast food recipe!

Thoughts Before Baking:

My friend Quinn loves to try out all kinds of new recipes whenever we get together. She is also a world traveler so I wasn’t surprised that she wanted to make a Brazilian dish. This recipe comes from Olivia’s Cuisine

Ingredients:

  • 4 cups tapioca flour (We couldn’t fine it so we used regular flour)
  • 1¼ cups milk
  • ½ cup water
  • 6 tablespoons oil
  • 1½ cups grated parmesan cheese
  • 1 cups shredded Mozzarella cheese
  • 2 large eggs
  • 2 teaspoons salt

Directions:

  1. Preheat oven to 400F degrees with a rack in the middle.
  2. Combine the milk, water, oil and salt in a saucepan and bring to a boil over medium high heat.
  3. Add the flour to the bowl of a stand mixer and, once the milk mixture boils, pour it over the flour. Turn the mixer on and mix it well.
  4. With the mixer still on, add the eggs, one at a time.
  5. Once the eggs are incorporated, add the cheese, a little at a time, until fully incorporated.
  6. The dough is supposed to be soft and sticky. However, if you’re worried it’s too liquidy, add some more flour.
  7. To shape the balls, wet your hands with cold water and, using a spoon, scoop some of the dough to shape balls that are a little smaller than golf-sized.
  8. Place the balls on a baking sheet covered with parchment paper.
  9. Top with shredded cheese.
  10. Bake for 15-20 minutes or until they are golden and puffed.
  11. Serve them warm! 🙂

These were really good. I wasn’t sure what to expect but they came out a cheesy and delicious biscuit.

So my niece was learning about Japan and wanted to cook some Japanese food. She’s extremely picky so I had a hard time finding something she would enjoy.

I finally found this recipe from thedailyenglishshow and thought that with its chocolatey-ness it should be a hit.

Ingredients:

  • 2 Cups of Rolled Oats
  • 1/4 Cup of Cocoa Powder
  • 1/4 Cup of Oil
  • 1/2 Cup of Sugar
  • 1 Cup of Milk or Soymilk

Directions:

  1. Mix the oats and cocoa powder.
  2. Heat the oil, sugar, and milk or soymilk.
  3. Bring it to a boil and then simmer for two minutes.
  4. Add the liquid to the oats.
  5. Roll into balls or place in tupperware and when cool, cut into squares.

So last year I did a breakfast food post and I thought that it would be fun to keep that tradition going!

I found this recipe in a Good Housekeeping magazine, I don’t remember which one, and it intrigued me. Potato chips in an omelet? Will that taste good?

Ingredients:

  • 8 Large Eggs, beaten
  • 3 Cups (about 4 oz.) of Potato Chips, Crushed
  • 1/4 Cup of Fresh Parsley, Chopped
  • 2 Tablespoons of Oil (I used Olive Oil)
  • 1 Small Onion, Chopped
  • 1/4 Teaspoon of Smoked Paprika (Can substitute with Cayenne Pepper)
  • Salt and Pepper

Directions:

  1. In a large bowl combine the eggs, potato chips, and parsley.
  2. In a 10 inch nonstick skillet, heat 2 tablespoons of oil on medium-low.
  3. Add the chopped onion and cook for 8 minutes.
  4. Stir slowly, until the edges start to set. Cook undisturbed until top is mostly set.
  5. Cover with a large lid and carefully flip. (If your skillet has no lid, use a large plate or platter without a rim.)
  6. Slide the omelet back into the pan and cook 5 minutes, or until set.
  7. Sprinkle with paprika.
  8. Add salt and pepper to taste.
  9. Serve with an arugula salad and a baguette.
