What to Do When You Run Out of Cupcake Liners

I was making Breakfast Puffin Muffins the other day, when I realized I ran out of cupcake liners!

I wasn’t sure what to do!

Then I scoured the internet until I found a hack I could do with what I had.

If you run out of cupcake liners you can do three things. 1) Spray the pan with non-stick cooking spray.

2) Line the pan with parchment paper.

 

3) Get a paper towel and wet in melted butter or oil. Wipe the pan with it, making sure to heavily oil the molds.

Cheese Potato Crisps

So there were a few recipes I wanted to make from The Cereal Murders, but I didn’t have a chance to. So instead I decided to pull out a recipe that actually uses cereal and place it here instead. I’ve made this recipe so many times, the page is all messed up and torn-it is that good.

So this recipe comes from The Kellogg’s Cookbook and uses the cereal corn flakes. I am telling you this is one of the best potato dishes ever-no joke.

You defintely need to try it yourself.

“These are better than French fries! We guarantee that once you try them, you’ll make these cheesy potatoes a standard at your table. Using different cheeses such as Monterey Jack, American, Swiss, or grated Parmesan cheese, and a bit of chili powder easily adds variety and keeps the dish interesting.

Ingredients:

  • 2 Cups of Kellogg’s Corn Flakes
  • 3 Large Baking Potatoes, peeled and cut lengthwise into 1/4-inch thick slices
  • Salt to taste
  • 1 Cup of Shredded Cheddar Cheese
  • 1/2 Teaspoon of Paprika
  • 1/4 Cup of Sliced Scallions or Green Onions
  • Non-Stick Cooking Spray

Directions:

  1. Place the corn flakes in a reusable plastic bag.
  2. Seal the bag and, using a rolling pin, crush the flakes to a medium crumb.
  3. Open the bag and measure the crumbs, you should have 1 cup. Set aside.
  4. Preheat the oven to 375 degrees F.
  5. Lightly coat a large baking sheet with Non-Stick Cooking Spray.
  6. Lay the potatoes on the prepared baking sheet in a single layer. Lightly coat with Non-Stick Cooking Spray.
  7. Sprinkle the potatoes with salt to taste.
  8. Sprinkle each potato with some of the cheese.
  9. Top with corn flake crumbs and a sprinkling of paprika.
  10. Bake in the preheated oven, without turning, for about 25 mins, or until potatoes are cooked through and golden brown.
  11. Remove from oven and transfer to a serving platter.
  12. Serve with scallions.

Thoughts After Cooking:

Sorry no picture, but these are the best potatoes ever! After eating this, it will be all you want.

Vanilla Crackle

So I had a recipe on Gingerbread Wands which I thought would go perfect with Gingerbread Cookie Murder, but I lost the recipe and can’t make them.

So instead I will post a recipe from Joanne Fluke, but if you are interested in Gingerbread cookies, check this recipe out.

Thoughts Prior to Cooking:

So the recipe comes from Apple Turnover Murder. This recipe intrigued me as it only had a few ingredients and seemed incredibly easy to make.

She calls it Vanilla Crack, but that has negative connotations so I changed the name.

Ingredients:

  • Non-stick Cooking Spray or Butter
  • 1 Box of Soda Crackers ( I used saltines)
  • 2 Sticks of Salted Butter (1 Cup, 8 oz, 1/2 lb)
  • 1 Cup of White Granulated Sugar
  • 2 Teaspoons of Vanilla Extract
  • 1/2 Cup of Salted Nuts (optional)

Directions:

  1. Line a 10 by 15-inch cookie sheet with foil.
  2. Spray the foil with non-stick cooking spray or rub with butter.
  3. Cover the pan completely with a single layer of crackers, salt side up. Set aside
  4. Preheat oven at 350° Fahrenheit.
  5. Combine the butter, sugar, and vanilla in a heavy saucepan. Bring it to a full boil over medium heat, stirring constantly.
  6. Boil for five minutes, stirring constantly. Don’t stop stirring.
  7. Pour the mixture over the crackers as evenly as possible. Spread it about if needed.
  8. Sprinkle the nuts on top.
  9. Slide the pan into the oven for ten minutes.
  10. Remove pan from oven and let it cool. When they have thoroughly cooled, peel off foil, and break into pieces.

Thoughts After Cooking:

When I ate the first piece I thought they were okay. But then, I had to have another, and another, and another…you see why they are called crack. They are addicting! But there is no drugs in it, it is that toffee taste that is so good it destroys your self-control.

These were really good, and there is a chocolate version that I am eager to try.

Thoughts Prior to Cooking:

This recipe comes from the Hannah Swenson Mystery Apple Turnover Murder.

Hannah makes this dish for her boyfriend and sheriff deputy, Mike. Now before reading this book I had never heard of a hotdish, other than a hot dish, as in a dish that is hot. Apparently they are big in the Midwest and Northwest, but me being from California we don’t eat “hotdishes”, we eat casseroles. But I was willing to give it a try as to how they described it in the book made it sound extremely tasty.

Ingredients:

  • Non-stick Cooking Spray or Butter
  • 1 and 1/2 lbs of Lean Ground Meat (such as hamburger, pork, chicken, turkey, sausage, etc. Make sure it is lean as the fat does not drain out of this dish)
  • 2 -12oz Cans of Cream of anything
  • 1 lb Package of Tater Tots
  • 1 Cup of Shredded Cheese (Be sure to use only one cup as too much can become an insulator and keep the bottom layers from cooking.)
  • Worcestershire Sauce (Optional)

Directions:

  1. Preheat the oven to 400° fahrenheit.
  2. Use the cooking spray or butter to coat a 9 by 13-inch pan.
  3. Put the ground meat in the bottom of the pan, spreading it as evenly as you can. Press it down with your hands or the back of a spatula.
  4. Spoon the two cans of cream-of-something on top of the meat. Make sure to spread it out as evenly as possible.
  5. Put the tater tots on top of the soup in a single layer. Spread them out as evenly as possible.
  6. Sprinkle on the shredded cheese.
  7. Do not cover your hotdish with anything. Slip the pan into the oven and bake for 35-40 minutes, or until the tater tots are browned and crispy.

Thoughts After Cooking:

In a way this particular hotdish is like the poor man’s Shepherd’s pie. Instead of mashed potatoes, tater tots, and instead of gravy, cream of something. I am not a fan of Shepherd pie at all, I can hardly eat it, but I did enjoy this Hotdish.

The only thing that I thought was wrong with this dish was that it was rather plain in seasoning. I recommend using the Cream of Chicken and Herb, as the herbs really helped along with adding a bit of Worcestershire sauce.

It was very easy to prepare and I recommend it for those of you who’s hours are crunched (working moms and college students) and need a fast dish to make and make quickly.

Ingredients:

  • Non-stick cooking spray or butter
  • 1.5 lbs of skinless sausage links
  • 8 Slices of bread (Any kind)
  • 2 Cups of shredded cheddar cheese
  • 1/2 Cup chopped onion
  • 1/4 Cup of finely chopped green bell pepper
  • 6 Eggs
  • 1/2 Teaspoon of salt
  • 1.5 Cups of milk
  • 1/2 Cup of half-and-half, or cream
  • 1 Tablespoon of mustard
  • Sliced mushrooms

Directions:

  1. Spray the inside of a 9 x 13 pan with non-stick cooking spray or rub with butter.
  2. Cut the crusts from the bread and throw away. Take the rest of the bread and cut it into one inch cubes. Toss them into the 9×13 pan.
  3. Cut the sausage links into fourths and sauté them until they are lightly browned.
  4. Drain the fat from your sausage. Put the sausage on top of the bread cubes.
  5. Sprinkle the grated cheese on the sausage, then the chopped onion, and finally the green bell peppers.
  6. Whisk the eggs with the salt, milk, half-and-half, and mustard. Pour the mixture over the top of the casserole. Cover with plastic wrap and place in the refrigerator overnight.
  7. Next Morning: This takes about an hour to a hour and a half to cook.
  8. Preheat the oven to 350° F.
  9. Take the casserole out of the fridge and remove the plastic wrap.
  10. Lay the sliced mushrooms over the top and place it in the oven.
  11. When egg is cooked, remove from the oven and enjoy!

Best-Ever Blueberry Muffins

So back in November I did a post reviewing Blueberry Muffin Murder. That Friday I was going to pair it with a blueberry muffin recipe, but unfortunately I couldn’t find it and instead reviewed a cookie recipe, Dinomite’s Fluffy Bites.

But now I have found it, and I thought it was the perfect thing for your New Year’s morning.

Thoughts Before Baking:

So in Blueberry Muffin Murder they give a recipe for blueberry muffins, but when I looked at the ingredients I didn’t like it. It seemed far too sweet and sugary.

Instead, here is a recipe for blueberry muffins that I absolutely love. This comes from the cookbook, Great American Recipes.

Ingredients:

  • 1.5 Cups of All Purpose Flour
  • 1 Tbsp. Baking Powder
  • 1/2 Tsp of Salt
  • 1/4 Cup of Sugar
  • 4 Tbsp (1 Stick) of Butter, melted and cooled
  • 1 Large Egg, Beaten
  • 3/4 Cup + 2 Tbsp of Milk
  • 1 Cup of Blueberries
  • Muffin Liners or Non-Stick Cooking Spray

Directions:

  1. Preheat the oven to 400 degrees F.
  2. Line a muffin pan with muffin liners or use non-stick cooking spray.
  3. Sift the flour, baking powder, and salt into a large bowl.
  4. Stir in the sugar.
  5. In a separate bowl, whisk together the melted butter, egg, and milk.
  6. Pour the wet ingredients over the dry and whisk until blended (mixture should be slightly lumpy.)
  7. Add the blueberries to bowl and stir them in just enough to combine.
  8. Divide the batter evenly among the prepared muffin cups.
  9. Bake for 18-24 minutes, or until golden.
  10. Remove from pan and transfer to a wire rack to cool.

I love them. I think they are the perfect blend, and not too sweet, but just right. It is the Best-Ever blueberry muffin recipe.

Happy Thanksgiving everybody!!!!

I know I usually post on Fridays, but I thought I would change today to be a part of the holiday mood. Now I know that you were probably expecting something on a side dish for Thanksgiving or what to do with the leftovers, but no. I decided to do something much different, something that you can eat the morning of before you start cooking up a storm. Or something you can eat tomorrow, before you go out shopping.

Thoughts Prior to Cooking:

So when I first saw this recipe I immediately wanted to make it. You see this same dish is made in one of my favorite movies, V for Vendetta. V for Vendetta is a dystopian future film. In the film the rebel, vigalante, V saves a young girl, Evie, from being raped by policeman. The next day she goes to work at the television studio, in which at the same time V comes, making the stations play his message. When they try to take him, Evie assists him, as she doesn’t want the man who saved her hurt. When Evie is knocked out, V takes her with him, and the next morning prepares “A Hole in One” (they call it a different name), for her. The way Evie enjoys it, always made me want to try it.

Ingredients:

  • Non-stick Cooking Spray or Butter
  • One Slice of Bread (Any Kind)
  • One Egg
  • Butter
  • Biscuit Cutter or juice glass
  • Salt & Pepper (to taste)
  • Italian Seasoning (optional)

Directions:

  1. Spray a frying pan with non-stick cooking spray or put in a pat of butter.
  2. Butter one side of a slice of bread. Put it butter-side-down in the frying pan. Butter the top side.
  3. With a biscuit cutter or the rim of a juice glass, stamp a hole in the center of the bread slice.
  4. Put the cut circle next to the bread slice in the pan.
  5. Put the pan on medium heat and wait until the bread begins to fry. Then crack an egg and drop it in the hole. Add salt, pepper, and the italian seasoning.
  6. When the egg has cooked on the bottom, flip the whole thing. Also flip the cutout piece of bread.
  7. Fry until egg is cooked the way you like it.

Thoughts After Cooking:

I thought this was really good and pretty easy to make. I’m not really a fried egg person, but I loved this as it is the perfect blend. The only thing that I would warn you about, is flipping the bread and egg over can be hard. I only did it once perfectly.
