Peanut Butter Oatmeal Apple Smoothie

It’s almost the 4th of July and we need a recipe to go with the holiday. So I was looking through all the smoothies I had previously reviewed and thought-can you make a smoothie with applesauce?

Well  after a quick google search-I found this Peanut Butter Oatmeal Apple Smoothie from With Salt & Wit

Ingredients:

  • 1 Apple or 1 Cup of Unsweetened Applesauce
  • 1/2 Cup of Vanilla Almond Milk
  • 1 Tablespoon of Peanut Butter
  • 2 Tablespoons of Old Fashioned Oatmeal
  • 1 Scoop of Vanilla Protein Powder (Optional)
  • 1 Teaspoon of Vanilla Extract
  • 1/2 Teaspoon of Cinnamon
  • 1 Cup of Ice
  • Whipped Cream (optional)

Directions:

  1. Add all ingredients to a blender.
  2. Mix well.
  3. Add to serving glass and garnish with whipped cream, if desired.

Thoughts After Blending:

I did not like this.

I thought it tasted really weird.

This is not good

I would not make this again.

Scottish Oat Scones

So on Tuesday we had a Scottish mystery, so I needed a Scottish recipe to go with it. The only problem is, I don’t like a lot of Scottish recipes. They are just not to my taste when I’m looking through the ingredients.

No thank you.

But my sister blog, JaneAustenRunsMyLife, has recently posted a scone recipe so I’m going to just borrow from her. 🙂

Ingredients:

  • 1.5 Cups of Flour
  • 2 Cups of Rolled or Steel Cut Oats
  • 1/4 Cup of Sugar
  • 4 Teaspoons of Baking Powder
  • 1/2 Teaspoon of salt
  • 1 Large Egg
  • 1/2 Cup of Unsalted Butter (1 stick), melted
  • 1/3 Cup of Milk

Directions:

  1. Preheat the oven to 425 degrees F and grease or line a baking sheet.
  2. In a large bowl combine flour, oats, sugar, baking powder, and salt.
  3. Make a well in the center of the dry ingredients.
  4. In small bowl, beat the egg until frothy.
  5. Now add butter and milk to egg, and whisk to combine.
  6. Pour into dry ingredients and mix together until you have a soft dough.
  7. Shape and pat the dough into two 6-7 inch circles.
  8. Cut into 6-8 pie shaped wedges and bake 10-15 mins, or until golden brown.
  9. Let cool for a few minutes.
  10. Serve with butter and/or jam.

Thoughts After Reading:

These were extremely delicious! I saw that my sister blog had a trouble with it being a little dry, but I just added a little more milk and I was good to go.

Meyer Lemon Poppyseed Cake

So we had a Pride and Prejudice themed mystery on Tuesday, we need something perfect for tea to go with it. Tuesday’s mystery I borrowed from my sister blog JaneAustenRunsMyLife, and I am borrowing today’s recipe from her as well.

Cake Ingredients:

  • 1/2 Cup of Unsalted Butter at Room Temperature
  • 1 Cup + 1 Tbsp of Sugar
  • 3 Large Eggs at Room Temperature
  • 1.5 Tbsps of Meyer Lemon Zest
  • 2 Tbsps of Meyer Lemon Juice
  • 1.5 Tsp of Vanilla Extract
  • 1.5 Cups + 2 Tbsp of Flour
  • 1/2 Tsp of Salt
  • 1/4 Tsp of Baking Soda
  • 1/4 Tsp of Baking Powder
  • 1.5 Tbsp of Poppyseeds
  • 1/2 Cup of Plain Greek Yogurt at Room Temperature

Glaze Ingredients:

  • 1 Cup of Confectioner’s Sugar (Powdered Sugar)
  • 3-4 Tbsps of Whole Milk

Directions:

  1. Preheat the oven to 350 degrees F.
  2. Spray a 9 x 4 inch loaf pan with cooking spray.
  3. In a small bowl, whisk together flour, salt, baking powder, and baking soda. Set aside.
  4. Use an electric mixer to beat the sugar and butter together.
  5. Add the eggs one at a time and beat well after each egg.
  6. Add lemon zest, lemon juice, and vanilla. Mix until combined.
  7. With the mixer on low add some of the flour mixture, and mix.
  8. Then add the yogurt and mix. Repeat alternating between flour mixture and yogurt.
  9. Remove from mixer and mix in poppyseeds, but just until they are incorporated. Do not over mix.
  10. Pour batter into pan and cook for 55-60 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
  11. Remove from oven and cool for 10 mins.
  12. While cake is cooling, whisk confectioner’s sugar and milk together.
  13. While cake is warm, spoon the glaze over the top.
  14. Sprinkle with poppyseeds if desired.

This was absolutely delicious!

Skinny Chai Tea Latte

So Tuesday’s post was a mystery set in India, and I thought I should have an Indian/Indian themed recipe to go with it. I had planned to make some naan, but as I hadn’t yet, I thought I would borrow a chai tea recipe from my sister blog, JaneAustenRunsMyLifeI wouldn’t say I’m lazy, but as she has already done it, why not borrow it?

This recipe comes from a book we added at the library, Lose Weight By Eating: Detox Week by Audrey Johns. I was flipping through the book, processing it, when this recipe caught my eye and I had to make it.

“Oh, the irony…I’m typing this at a coffeehouse. I’m just trying to be honest here, because though I don’t often visit coffeehouses, I do once in a while when I need a quiet space to work. I made this recipe earlier today, then figured, “What the heck, let’s make sure it is as good as Starbucks,” so I headed on over to my local spot and ordered-you guessed it-a chai tea latte. So here I am, drinking my second chai tea latte of the day and typing up my recipe, which I think tastes exactly the same.

I whisk the milk by hand, and it’s very easy. It only takes a minute and you’re done (and by the way I’ve had two wrist surgeries in my whisking hand, so I assure you anyone can handle this mild activity).”

Ingredients:

  • 3 Chai Tea Bags, with the Paper Tags Cut Off
  • 2 Cups of Unsweetened Almond Milk or Milk of your choice
  • 2 Tablespoons of Pure Maple Syrup (optional)
  • Sugar (optional)
  • Pumpkin Pie Spice (optional)

Directions:

  1. Heat 2 cups of water.
  2. One heated, remove from heat and steep 3 bags of chai tea for five minutes.
  3. In a small saucepan heat the milk over medium-low heat. As soon as the milk is simmering, whisk it.
  4. Pour the tea into two cups and and add sugar, maple syrup, or other sweetener.
  5. Top with frothy milk.
  6. Sprinkle on some pumpkin pie spice (if using).
  7. Congratulations, you just saved yourself $5.04.

Thoughts After Making:

I thought it was really good, I had also learned from reading my sister blog’s post to make additional cups of tea as you end up with way more milk than tea.

Ingredients:

  • 1 Tsp of Matcha Green Tea Powder
  • 1 Cup of Milk (your choice)
  • 1/2 Cup of Plain Sorbet
  • 1/2 Cup of Frozen Vanilla Yogurt
  • 1 Cup of Ice

Directions:

  1. Place ingredients in blender and blend.

It was delicious, just like the ones they make at Jamba Juice (but cheaper)!

Strawberries and Cream Oatmeal Smoothie

Thoughts Before Cooking:

Do any of you have Something Extra Raley’s Rewards? I do and I love it. Every three months you receive coupons to do with stuff you had bought; and for your birthday get a free cupcake, free box of cake mix, and a free birthday card.

Every now and then they give you a freebie item, and I got a free container of 1 lb of strawberries. I love starwberries, but they were very ripe and needed to be eaten ASAP. So what better way to do it then with a smoothie?

This comes from The Kitchen Paper.

Ingredients:

  • 1 Cup of Frozen Strawberries (I used fresh)
  • 1/2 Cup of Yogurt
  • 3/4 Cup of Milk
  • 1/2 Cup of Uncooked Oatmeal
  • 1 Tsp of Vanilla Extract (optional)
  • Strawberry slices to top the smoothie (optional)
  • Whipped cream (optional)

Directions:

  1. Combine all ingredients in a blender and blend until smooth.
  2. Top with strawberry slices or whipped cream.
  3. Drink immediately.

Amish Baked Oatmeal

Who else thinks of these guys when they hear “Amish”.

So we had an Amish mystery on Tuesday, Blessings in Disguise, so we needed an Amish recipe. After searching on pinterest, I found Amish Baked Oatmeal from Cooking Classy

You know me, I don’t eat regular oatmeal-so any recipe I can find that uses it, I go for.

Ingredients:

  • 2 Large Eggs
  • 1/2 Cup of Light Brown Sugar
  • 1.5 Tsp of Baking Powder
  • 1 Tsp of Cinnamon
  • 1.5 Tsp of Vanilla Extract
  • 1/4 Tsp of Salt
  • 1 1/4 Cup of Milk
  • 1/4 Cup of Butter, Melted
  • 3 Cups of Rolled Oats (Quick Oats work too)
  • Cinnamon Sugar

Directions:

  1. Preheat the oven to 350 degrees F.
  2. Butter an 8×8 inch baking dish, set aside.
  3. In a large mixing bowl, whisk together the eggs.
  4. Add in brown sugar, baking powder, cinnamon, vanilla, and salt. Whisk until there are no lumps.
  5. Stir in milk and melted butter.
  6. Add oats and mix well.
  7. Pour into prepared baking dish and spread evenly. (At this point you can refridgerate overnight or bake immediately.)
  8. Bake in oven 30-40 mins until it is set.
  9. Cut into squares and serve warm with fresh nuts, milk, a little cream, half and half, maple syrup, or honey of desired.
  10. Top with a blend of cinnamon and sugar.

Thoughts After Baking:

It was good. A little bland until I put some cinnamon and sugar on top. Then it was KNOCKOUT delicious! I wanted to eat it all!

Matcha Latte (Hot or Cold)

So Tuesday we reviewed The Key to Midnight, which is set in Japan, so I thought why not have a Japanese recipe? And of course one of my favorites, Matcha Tea!

This recipe comes from my sister blog, JaneAustenRunsMyLife, who LOVES tea.

Ingredients:

  • 2 Tsp of Matcha Powder
  • 2 Tsps of Sugar
  • 3 Tbsps of Warm Water
  • 2 Cups of Milk (Hot or Cold)

Directions:

  1. Put the Matcha powder, sugar, and water in a cup or mug
  2. Whisk together to ensure no lumps (use a matcha whisk or electric stirrer.
  3. If doing hot, warm the milk and pour into the mug. If doing cold, just pour the milk in the mug.
  4. Use the whisk or electric stirrer to combine everything until it is a light green color.

Scrambled Eggs in a Waffle Maker

Thoughts Before Cooking:

I received a waffle maker as a gift, and after making a ton of waffles-I was interested in what else could be made in a waffle maker. This recipe comes from Snapguide.

Ingredients:

  • Eggs (Depends on how many you want to make)
  • Milk
  • Waffle Maker
  • Salt
  • Pepper

Directions:

  1. Turn your waffle maker on. It depends on the waffle maker the heat, with mine I do a two or three.
  2. While the waffle maker is heating up whisk your eggs with a bit of milk.
  3. Spray cooking spray in the waffle maker, or skip this step if you have a non-stick one.
  4. Add eggs, be careful not to overfill your waffle maker.
  5. Add salt and pepper.
  6. Cook for 1-3 mins.
  7. When cooked through, remove from waffle maker.
  8. Take out and enjoy.

I thought it was really good and so fast. It was done in no time.

Eggless Cookie Dough

I was in the mood for something sweet-like cookies, but I didn’t want to bake as it is too hot.

So I started searching for an eggless cookie dough recipe that I could just eat instead. I found this one on Like Mother Like Daughter. 

Ingredients:

  • 2 Tbsps of Unsalted Butter, softened
  • 2 Tbsps of Brown Sugar
  • 1 Tbsps of Sugar
  • 1/4 Tsps of Vanilla
  • 1 Tbsp of Milk
  • 1/8 Tsp of Salt
  • 6 Tbsps of Flour
  • 1/4 Cup of Milk Chocolate Chips

Directions:

  1. Microwave your flour for 30 seconds to 1 min to eliminate the risk of e.coli.
  2. In a small bowl, cream together butter and sugars until mixed.
  3. Add vanilla and milk, stir to combine.
  4. Add in salt and mix until combined.
  5. Enjoy.

I didn’t take a picture, sorry. Instead I ate it all up as it was super good.

Earl Grey Infused Blueberry Smoothie

 

 

So we had an English mystery on Tuesday, we need a recipe to match. So I borrowed this from my sister blog JaneAustenRunsMyLife.wordpress.com

Ingredients:

  • 2 Teabags or 2 Tsp of Loose leaf Earl Grey Tea.
  • 1 Cup of Milk
  • 1 Tablespoon of Oats (I use Quaker Oats)
  • 1 Cup of Frozen Blueberries
  • 1 Cup of Vanilla Greek Yogurt
  • 1 Tablespoon of Maple Syrup

Directions:

  1. Microwave the milk, or warm in a pan.
  2. Steep the tea in the warm milk for 5 mins.
  3. After tea has steeped, allow milk to cool.
  4. When milk has cooled, put in blender.
  5. Add oats, blueberries, yogurt, and maple syrup.
  6. Blend until smooth.
  7. Serve.

OH MY GOODNESS!!!!!!!

 

IT WAS SOOOOOOO GOOOOOD!!!!!!!!!

 

It is one of the best smoothies I have ever, ever, ever had. It was soooo delicious I wished I had more.

Peanut Butter Banana Oat Smoothie

The recipe is actually Peanut Butter Banana Smoothie, but as I have one that is almost the same title I added oats to this to distinguish it from the other.

I found this on Pinterest and it sounded good (you know me and smoothies) and I had the ingredients. The original site is Daily Smoothie,  I think with a name like that, the will be popping up again on my blog…

Ingredients:

  • 1 Frozen Banana
  • 1/2 Cup of Almond Milk (I don’t like almond so I use regular)
  • 3/4 Cup of Greek Yogurt
  • 1/2 Cup of Oats
  • 1/2 Tsp of Cinnamon
  • 4 Tbsp of Peanut Butter

Directions:

  1. Combine all in blender and mix well.
  2. Add a dash of oats on top.

Thoughts After Making:

It was delicious. I loved the peanut butter and I loved the smoothie. It was delicious and I recommend it.

Creamy Sour Cream Lemon Pie

Thoughts Before Baking:

As you see above, today is Pi day so I decided to post a pie recipe.

I’ve made a sour cream lemon pie before, but this is a new recipe. This one comes from The Chunky Chef.

Ingredients

Pie Crust:

  • 2 Cups of All-Purpose Flour
  • 1 Teaspoon of Salt
  • 3/4 Cup of Shortening
  • Ice Water

Filling:

  • 1 Cup of Sugar
  • 4 Tbsp Cornstarch
  • 1 Cup of Milk
  • 2 Lemons Juiced (about 1/2 Cup)
  • 1 Tbsp Lemon Zest
  • 3 Large Egg Yolks, Lightly Beaten
  • 4 Tbsp Cold Butter, Cubed
  • 1 Cup of Sour Cream
  • Whipped Cream (Optional)
  • Lemon Slices (Optional)

Directions:

  1. In a mixing bowl, mix up the shortening and flour. Add in water a tablespoon at a time until dough is more malleable. If you add to much and it is too liquid-y, then just add a bit more flour to firm it up.
  2. Line crust with foil and place beans, rice, or pie weights (as pie dough will rise) and bake for 8 mins or until browned. Set aside to cool.
  3. In a heavy bottomed saucepan, add sugar and cornstarch. Whisk to combine.
  4. Slowly whisk in milk and lemon juice.
  5. Heat over medium heat, stirring often, until mixture is thickened and bubbly.
  6. Reduce to low, and cook 2 mins longer, stirring often.
  7. Remove from heat.
  8. Lightly beat eggs in a small mixing bowl. Whisking continuously, add a small amount of the hot lemon mixture, then add the mixture to the hot saucepan.
  9. Heat pan on medium heat until it comes to a gentle boil, and cook for 2 minutes.
  10. Remove from heat again and add lemon zest.
  11. Continue to cool, but don’t stir.
  12. Cool mixture for 30-40 mins and then fold in sour cream until no white streaks remain.
  13. Spoon mixture into the pie crust and spread out evenly.
  14. Cool in the refrigerator for 4 hours (or more). To serve, top with whipped cream and lemon slices.

I made this for Thanksgiving last year and it was sooooo good! It was eaten immediately. I only got one slice! 😦

Banana Oatmeal Breakfast Smoothie

You know me and smoothies! And I’m game for anything that uses up my big container of oatmeal. I found it from pinterest and it is from The Schmidty Wife.

Ingredients:

  • 1/4 Cup of Oatmeal
  • 3/4 Cup of Milk
  • 1 Tablespoon of Peanut Butter
  • 1 Banana
  • 4-5 Ice Cubes

Directions:

  1. Put all ingredients in the blender.
  2. Blend until smooth.

Thoughts After Cooking:

It was good. What amazes me is that there is only a little bit of peanut butter but it is so overpowering. A yummy smoothie

Peanut Butter and Jelly Smoothie

Another smoothie?

So yah, I drink a smoothie like every morning. There are going to be a lot of them being posted on here. This one I found online from Daily Smoothie.

Ingredients:

  • 1 Frozen Banana
  • 1 Cup of Unsweetened Vanilla Almond Milk or Other Milk of Your Choice
  • 1/4 Cup of Natural Creamy Peanut Butter
  • 2 Tbsp of Jelly

Directions:

  1. Add milk to blender first.
  2. Follow with peanut butter, jelly, and banana.
  3. Blend until smooth and creamy.

Thoughts After Cooking:

It was okay.

Not that good and to be honest I would never make it again.
