So I love egg salad sandwiches, but I don’t care for mayonnaise all that much. I have to have it very, very thin. I have always wanted to substitute, but everything I have tried hasn’t worked (never use plain Greek yogurt, it is just gross).
But one day I was looking at my fridge, and seeing all the hardboiled eggs I had I decided to make Egg and Spinach Hummus Toast–BUT then I had an idea!
If hardboiled eggs go great with hummus, then could I substitute mayonnaise with hummus in an egg salad sandwich?
So I googled it to see if it was a bad idea, or if it had been done before, and found this recipe from Allrecipes.
- 2 Slices of Bread
- 3 Tablespoons of Hummus
- 3 Hardboiled Eggs
- Toast the bread to your desired taste.
- Dice or chop the hardboiled eggs in the manner you like.
- Add hummus and mix together.
- Add salt and pepper to taste.
- Place the egg-hummus mixture on the slices of bread.
- Eat and enjoy.
Thoughts After Eating:
I thought this was really good. It was a great alternative to the mayonnaise and I love hummus.
