Carrot Oatmeal Muffins

So it is time for our tradition of New Year’s Day breakfast food recipe!

Thoughts Before Baking:

So I don’t like the titular dessert and looked for something else to try in this book, settling on Carrot Oatmeal Muffins.

I hate eating oatmeal-like for breakfast with milk or hot water. Ugh, so gross. So any time I find a recipe that uses up oatmeal in baking or smoothies, I love to try it.

Ingredients:

  • 1 1/3 Cup of Flour
  • 1 Cup of Quick-Cooking or Old-Fashioned Dry Oatmeal
  • 1 Tablespoon of Baking Powder
  • 1/2 Teaspoon of Baking Soda
  • 1 Teaspoon of Cinnamon
  • 1/2 Cup of Brown Sugar
  • 3/4 Cup of Finely Shredded Carrots
  • 1/2 Cup of Raisins (optional)-I didn’t do this as I hate cooked raisins
  • 1/2 Cup of Milk
  • 1 Beaten Egg
  • 1/3 Cup of Melted Salted Butter
  • 1 Teaspoon of Vanilla Extract

Directions:

  1. Grease or spray with nonstick cooking spray a 12-cup muffin tin, set aside. Preheat the oven to 375 degrees F.
  2. In a large mixing bowl, combine flour and oatmeal.
  3. Sprinkle the baking powder, baking soda, and cinnamon on top. Mix them thoroughly.
  4. Stir in the brown sugar. Mix until until all is blended.
  5. Shred the carrots if you haven’t already done so. A fine shred is best. You want them to cook in the time it takes the muffins to bake and turn golden brown and delicious.
  6. Add the shredded carrots and raisins if adding them, to your bowl and mix them thoroughly.
  7. In a separate small bowl, combine the milk, beaten egg, melted butter, and vanilla. Give it a good stir so that everything is well combined.
  8. Dump the contents of the small bowl into the larger bowl. Gently stir just until the dry ingredients are moistened and no dry “pockets” remain.
  9. Fill the prepared muffin cups 3/4 full.
  10. Bake for 20-25 or until a toothpick inserted in the center of the muffin comes out clean.
  11. Set the muffin pan on a cold burner or a wire rack for 10 mins. After they have cooled for 10 mins, put them on a rack to cool.
  12. Makes about 12 muffins.

Christmas Lace Cookies

Thoughts Before Cooking:

This book had a few recipes I was interested in, and this was one that sounded good and just right for Christmas.

Ingredients:

  • 1.5 Cups of Rolled Oats
  • 1/2 Cup of Melted Butter
  • 3/4 Cup of White Sugar
  • 1 Teaspoon of Baking Powder
  • 1 Teaspoon of Flour
  • 1/2 Teaspoon of Salt
  • 1.5 Teaspoons of Vanilla Extract
  • 1 Beaten Egg
  • 1/2 Cup of Chocolate Chips

Directions:

  1. Measure the oatmeal into a a medium-sized bowl.
  2. Melt the butter and pour it over the oatmeal. Stir.
  3. In a small bowl, combine the sugar, baking powder, flour, and salt. Mix well.
  4. Add the sugar mixture to the oatmeal mix and blend.
  5. Mix in the vanilla and egg.
  6. Add the chocolate chips and stir the mixture.
  7. Line cookie sheets with foil and grease lightly.
  8. Drop the cookie dough by rounded teaspoons. Don’t crowd the cookies together as they spread.
  9. Bake at 350 degrees F for 12 minutes.

Thoughts After Baking:

These were good but very buttery and greasy. They also cooked fast so watch out, or else you might burn them. But otherwise, very good.

Twin Sun Toast

As Tuesday’s book review was on a fantasy/science-fiction book, I thought that the perfect recipe to pair it would be one from The Star Wars Cookbook: Wookie Cookies and Other Galactic Recipes by Robin Davis.

This is similar to the Joanne Fluke recipe, Hole in One, but doubles it! Is it doubly delicious? Or a double fail?

Ingredients:

  • 1 Wide Slice of Sourdough Bread (at least 7 inches wide)
  • 1 Teaspoon of Butter
  • 2 Small Eggs
  • Salt & Pepper

Directions:

  1. Put the bread slice on a cutting board.
  2. Using a 2-inch round cookie cutter, cut out two holes side by side, but leaving bread between and around the holes.
  3. Put a skillet on the stove and switch on the medium heat.
  4. Put the butter in the skillet.
  5. As butter melts, spread it evenly around the bottom of the pan.
  6. Place the bread slice in the pan and break an egg into each hole.
  7. Add salt and pepper.
  8. Fry until the clear parts of the egg turn white, about 1 to 2 minutes.
  9. Slip a spatula under the bread and flip it over quickly and carefully enough to not let the eggs slide out of the holes.
  10. Cook for one minute more.
  11. Slide toast on a plate and a plate and enjoy.

Thoughts After Reading:

So this did not work out at all like the image in the cookbook. The bread kept ripping and egg went everywhere.

But I did not see that they needed to be small eggs, I just used the regular large ones.

So I will try to make this again and make sure I use small ones. But otherwise it was a delicious way to start the morning.

I love potatoes, so when I saw this recipe I thought it would be delicious! Let’s check it out.

Ingredients:

  • 12 Baking Potatoes
  • 2 Tablespoons of softened butter
  • 8 tablespoons of melted salted butter
  • 1 teaspoon of salt
  • 2 tablespoons of dried crumbled basil
  • 1 teaspoon of paprika
  • 4 tablespoons of bread crumbs
  • 8 tablespoons of salted butter
  • Lemon Juice

Directions:

  1. Choose a bowl large enough to hold all the potatoes and fill with cold water. Add a teaspoon of salt and a squirt of lemon juice in the water.
  2. Peel a potato and rinse it off.
  3. Slice it the  potato in quarters, but only halfway, not completely through. Drop it in the water so it won’t discolor
  4. Preheat the oven to 425 degrees F.
  5. Use a baking pan that will hold all your potatoes in a single layer.
  6. Use the 2 tablespoons of butter to grease the baking pan.
  7. Dry the potatoes and lay them in the pan.
  8. Drizzle the melted butter and sprinkle with salt.
  9. Sprinkle with basil and paprika.
  10. Place pan in oven uncovered for 30 mins.
  11. Take the pan out of the oven and sprinkle with bread crumbs.
  12. Melt the cold stick of butter and drizzle over the breadcrumbs
  13. Slip pan back in the oven for 25 mins.

Thoughts After Reading:

These were very good but were much tastier when I added cheese. I love cheese.

Vertical vents made it hard to move the potatoes as they could easily snap. Next time I think I will cut them horizontally instead. But otherwise, delicious!

Mini Lemon Pancake Cookies

Thoughts prior to cooking:

So this recipe comes from Cream Puff Murder (Hannah Swensen #11). The actual name of the recipe is Lois Brown’s Lemon Cookies, but after making them I changed the name (more on that later). The main reason why I wanted to make these cookies was because it is one of the few lemon desserts that actually use a lot of lemon. Most only want the zest, but this one actually used the juice.

Ingredients:

  • 1/2 Cup of Softened Butter (1 stick)
  • 3/4 Cup of Granulated Sugar
  • 1 Egg, beaten
  • 1 Tablespoon of Lemon Zest (lemon zest is the yellow peel being finely grated.)
  • 2 Teaspoons of Lemon Juice
  • 1 Teaspoon of Baking Powder
  • 1/4 Teaspoon of Baking Soda
  • 1/4 Teaspoon of Salt
  • 1 2/3 Cup of Flour
  • 1/2 Cup of Milk

Topping:

  • 1/4 Cup of Lemon Juice
  • 3/4 Cup of Granulated Sugar

Directions:

  1. Preheat the oven at 350° F
  2. Beat the butter and sugar together until they are light and fluffy.
  3. Add the egg, lemon zest, and lemon juice. Mix it all together.
  4. Mix in the baking powder, baking soda, and salt. Mix well.
  5. Mix in one cup of flour and 1/4 a cup of milk. Stir everything up.
  6. Add in the remaining 2/3 cup of flour and 1/4 a cup of milk. Mix well.
  7. Drop by teaspoons onto an ungreased cookie sheet. Make the cookies small.
  8. Bake for 8 mins.
  9. Topping: Heat the lemon juice for a bit in the microwave. Add the sugar and stir it all up.
  10. When the cookies come out of the oven, brush the topping onto the hot cookies.
  11. Yields 4 dozen cookies.

Thoughts after cooking:

These cookies came out tasting like a mix between lemon cupcakes and pancakes. They also look a lot like pancakes as they are flat and creamy just like them. I thought they were amazing, and since they are so small, I consumed a ton of them. It’s just so hard to stop once you get started.

Chocolate Covered Cherry Delights

When ever I try to review something that has a titular recipe, such as in Joanne Fluke’s work; I try to do a recipe that matches the title. For instance I made chocolate chip cookies to go with Chocolate Chip Cookie Murder, strawberry shortcake to go with Strawberry Shortcake Murder, etc. But sometimes when I find myself with a book title of a food I don’t like I find myself in an awkward position trying to search for another recipe to use.

In this case, I HATE cheesecake of all kinds.

So instead of that I decided to do something different, but still had to do with cherries as that was the theme of the book. I choose the recipes Chocolate Covered Cherry Delights from Chocolate Chip Cookie Murder.

Thoughts Before Baking:

This recipe appealed to me because I like chocolate covered cherries. I figured they must be as equally good in a cookie.

Ingredients:

  • 1 Cup of Melted Butter
  • 2 Cups of White Sugar
  • 2 Eggs
  • 1/2 Teaspoon of Baking Powder
  • 1/2 Teaspoon of Baking soda
  • 1/2 Teaspoon of Salt
  • 2 Teaspoons of Vanilla Extract
  • 1 Cup of Cocoa Powder
  • 3 Cups of Flour
  • 2 small 10-oz jars of
  • 1 package of chocolate chips
  • 1/3 Cup of condensed sweetened milk
  1. Melt Butter and mix in sugar.
  2. Let mixture cool and add eggs.
  3. Mix it thoroughly and then add baking powder, baking soda, salt, vanilla, and cocoa, stirring after each addition.
  4. Add flour and mix well.
  5. Drain cherries and remove stems, reserving juice.
  6. Roll dough into walnut size balls with your fingers.
  7. Place on a greased cookie sheet.
  8. Press down the on the center of the cookie with your thumb to make an indentation, placing the cherry inside.
  9. In a saucepan over simmering water, combine the chocolate chips and condensed milk. Heat on low until chips are melted.
  10. Add ~1/8 cup of cherry juice and stir into a thick sauce.
  11. Spoon sauce over the center of each cookie, covering the cherry.
  12. Bake at 350 for 10-12 mins. Let it cool.

This was really good but a little too sweet for my taste.

I ended up having to half the syrup drizzle as I only had one cup of chocolate chips instead of a whole package, but it worked out pretty well. I only missed a few cookies.

My biggest problem in making these was that there was no picture as to see how much chocolate should I drizzle. I had to guess with some cookies having a little chocolate and others having a whole lot.

But everyone else loved them and thought they were fantastic. In fact I took them to a party and they were gobbled up instantly.

I got this recipe from the Hannah Swensen mystery, Fudge Cupcake Murder. It sounded really tasty so I thought I would try it out.

Ingredients:

  • 1/2 Cup of Melted Butter (1 Stick)
  • 1/2 Cup of White Sugar
  • 1 Cup of Brown Sugar
  • 1/2 Teaspoon of Baking Soda
  • 1/2 Teaspoon of Salt
  • 1/2 Teaspoon of Baking Powder
  • 2 Teaspoons of Vanilla Extract
  • 1 Teaspoon of Cinnamon
  • 2 Beaten Eggs
  • 1/2 Cup of Rolled Oats
  • 1 Cup of Chopped Apples
  • 1.5 Cups of Flour

Directions:

  1. Preheat the oven at 375 degrees Fahrenheit
  2. Melt butter, add the sugars, and stir.
  3. Add baking soda, salt, baking powder, vanilla, cinnamon, and beaten eggs.
  4. Mix well.
  5. Add the chopped apple.
  6. Add the flour and mix it thoroughly.
  7. Add the Oats and mix well.
  8. Grease a 9-inch by 13-inch cake pan. Spoon the dough in and smooth it with a rubber spatula.
  9. Bake for 25-30 minutes, or until slightly brown on top.
  10. Let it cool and cut into bars like brownie.

Time for another holiday recipe:

Sugar Cookie Murder

So this recipe of mushrooms comes from Sugar Cookie Murder and the fictional Lake Eden Holiday Buffet Cookbook.

Thoughts Before Cooking:

I love mushrooms and these stuffed ones sounded so great that I decided they would be an excellent one to try out.

Ingredients:

  • 2 Pounds of Ground Sausage
  • 3 Cloves of Finely Chopped Garlic
  • 2 Tablespoons of Ground Sage
  • 8-oz package of Cream Cheese
  • 1 Tablespoon of Parsley
  • 1 lb of Medium to Large Mushrooms (Big enough to stuff)
  • Parmesan Cheese (to sprinkle)
  • Butter
  1. In a large, non-stick skillet, combine the sausage, garlic and sage.
  2. Sauté until sausage is browned and garlic is translucent.
  3. Drain the fat from the skillet and add softened cubed cream cheese and parsley.
  4. Simmer for 10 minutes, remove from heat, and cover.
  5. Wash mushrooms. Remove the stems and set the caps aside.
  6. Chop the stems very fine and stir into the sausage/cheese mixture.
  7. Brush caps with melted butter and arrange cap down on a non-stick baking sheet (if needed shave a bit from the bottom of the cap to make them flat).
  8. Fill each cap with a heaping mound of warm sausage mixture and sprinkle with Parmesan cheese.
  9. Bake at 325 degrees F. for 15 minutes.

Thoughts after cooking:

These were great! They were delicious and could make a great appetizer or mean if paired with a salad.

The cream cheese might make them a little rich for some, but I’m definitely going to make them again.
