Cucumber Tea Sandwiches

So  Tuesday’s post was on a mystery set in Victorian England, so we need a recipe to go with it. I’m thinking a tea time recipe…

Specifically, cucumber sandwiches borrowed from my sister blog: JaneAustenRunsMyLife.

Ingredients:

  • 8 oz Cream Cheese
  • 3 Tablespoons of Mayonnaise
  • 2 Teaspoons of Chopped Fresh Dill
  • 1 Teaspoon of Chopped Fresh Chives
  • 1/4 Teaspoon of Garlic Powder
  • Salt
  • Pepper
  • 1 Long English Cucumber, Thinly Sliced
  • 1 Loaf of Bread, Crusts Removed

Directions:

  1. Mix cream cheese and mayonnaise in a small bowl with a hand mixer, until smooth.
  2. Stir in herbs, garlic powder, salt, and pepper.
  3. Cut crusts off bread slices.
  4. Spread bread slices with cream cheese mixture.
  5. Thinly slice cucumbers, layer over half of the bread slices.
  6. Top with additional herbs, if desired.
  7. Top with remaining bread slice and cut each sandwich into three pieces.

Thoughts After Reading:

These sandwiches were absolutely delicious. I couldn’t stop eating them. These will go great with your choice of a cup of tea.

Irish Potato Pie

It is Pi[e] Day!

But not only that, with Saint Patrick’s Day being on Tuesday, I thought what better pie to make then an Irish pie.

I searched throughout Pinterest, and found this recipe which comes from A Spicy Perspective.

Ingredients:

  • 1 Sheet of Frozen Puff Pastry Thawed or Pie Crust
  • 4 Tablespoons of Butter
  • 7 Slices of Bacon, Chopped (I omitted this)
  • 5 Potatoes-Peeled and Sliced Thin (I used only three)
  • 1 Onion, Peeled and Sliced
  • 1 Tablespoon of Fresh Dill
  • 1/2 Cup of Heavy Cream
  • Salt
  • Pepper
  • Chives

Directions:

  1. Preheat the Oven to 350 degrees F.
  2. Place the thawed puff pastry or pie crust in a 8-9 in pan and crimp the edges.
  3. Remove the excess dough and piece it along the rim if needed to make the rim in some places.
  4. Refrigerate until it is ready to fill.
  5. Place butter and bacon in a large skillet over medium-high heat and sauté until bacon is crispy and toss in the onions.
  6. Follow with potatoes and dill.
  7. Season with 1/2 tsp of salt and 1/4 tsp of pepper.
  8. Gently stir 3-5 mins.
  9. Spoon mixture into crust and drizzle with heavy cream.
  10. Bake on low rack for 35-45 mins-or until the potatoes are fork-tender and crust golden.
  11. Rest for 10 mins and then sprinkle with fresh chives.

Thoughts After Baking:

I omitted the bacon as I don’t like the way that bacon grease smells after cooking. Then after last year’s potato dish didn’t cook all the way through, I decided to use less potatoes this year. And I added all the chives as I didn’t want them to go bad.

This turned out really delicious, although it was missing one thing: cheese! I added a bit later and this made a great slice of pie-a slice that I will be eating on Saint Patrick’s Day too!

Individual Vegetable Terrines with a Spicy Tomato Sauce

So I was shelving book in the library and saw this cookbook Vegetarian: Tasty Recipes for Every Day, by Helen Aitken, and was just captured by that image on the cover. I had to check it out and make it for myself

Ingredients:

Vegetable Terrines

  • 1/2 Cup of Oil
  • 2 Zucchini, Sliced on the Diagonal
  • 1 lb Eggplant, Sliced
  • 1 Small Fennel Bulb, Sliced
  • 10 oz of Ricotta Cheese (I don’t like Ricotta so I use Cottage Cheese)
  • 2 oz of Parmesan Cheese, Grated
  • 1 Tablespoon of Fresh Flat-leaf Parsley
  • 1 Tablespoon of Chopped Fresh Chives
  • 1 Red Bell Pepper, Grilled, and cut into large pieces
  • 1 Yellow Bell Pepper, Grilled, and cut into large pieces

Spicy Tomato Sauce

  • 1 Tablespoon of Oil
  • 1 Onion, finely chopped
  • 2 Cloves of Garlic, crushed
  • 1 Red Chili, seeded and chopped
  • 14 oz Can of Chopped Tomatoes
  • 2 Tablespoons of Tomato Paste

Directions:

Vegetable Terrines

  1. Heat 1 tablespoon of oil in a large frying pan. Cook the vegetables in separate batches on high heat for 5 mins, or until golden, adding oil if needed.
  2. Drain vegetables separately on paper towels.
  3. Preheat the oven to 400 degrees F.
  4. Place the cheeses and herbs in a small bowl and mix together.
  5. Lightly grease four 1 1/4 cup ramekins and line with baking paper.
  6. Using half the eggplant, put a layer in the base of each dish.
  7. Layer with zucchini, bell pepper, cheese mixture, fennel and onion over the eggplant.
  8. Cover with the remaining eggplant and press down firmly.
  9. Bake for 10-15 mins or until hot.
  10. Leave for 5 minutes before turning out.

Spicy Tomato Sauce

  1. Heat oil in a saucepan and cook the onion and garlic for 2-3 mins or until soft.
  2. Ass the chili, tomato, and tomato paste and simmer for 5 mins or until thick and pulpy.
  3. Purée in a food processor.
  4. Return to the saucepan and keep warm.
  5. Spoon over the terrines.

Thoughts After Reading:

This was sooooooooooooooooooo good that I ate it all instantly and forgot to take a pic. I strongly recommend it! Like I am serious, words cannot describe how delicious this was.

And if in a time crunch, you can substitute the spicy sauce for pasta sauce.

Flæskeæggekage

Thoughts Before Cooking:

Willow Rose is Danish as am I. So I thought what better than to try out a recipe from The Cooking of Scandinavia from the Time-Life books food around the world series.

In Danish, Flæskeæggekage (FLES-keh-egeh-KAH-geh) means bacon and egg cake. I never heard of it or tasted it before, but thought why not try it out? It sounded good, after all who doesn’t like bacon and eggs?

Ingredients:

  • 1/2 lb of Bacon, preferably Danish
  • 6 Eggs, Lightly Beaten
  • 1 Tablespoon of Flour
  • 1/2 Teaspoon of Salt
  • 1/2 Cup of Milk
  • 2 Tablespoons of Chives, finely cut

Directions:

  1. Cut the long strips of bacon in half crosswise and fry them over moderate heat in a heavy 10 to 12 inch skillet.
  2. Do not let them get too crispy.
  3. Drain the strips on paper towels and set them on an ovenproof platter or baking dish and keep warm in a 200 degree F oven.
  4. Remove all but a tablespoon of the clear bacon fat from the skillet.
  5. In a mixing bowl, beat the flour and salt into the eggs only long enough to combine them.
  6. Slowly beat in the milk.
  7. Warm the fat in the skillet over moderate heat and then pour in the egg mixture.
  8. Turn the heat down to low and without stirring let the eggs set into a firm custard. (This will take about ~20 minutes.)
  9. When finished, turn off the flame and arrange bacon slices and chives over the top of the finished cake.
  10. Serve directly from the pan; as a first course, brunch, or late-supper dish.

Thoughts After Cooking:

So I thought it was fantastic.

I thought it was a tad salty, and the next time probably wouldn’t add any salt to it. Otherwise it was delicious and goes great when paired with a salad.

Herbed Eggs with Sour Cream

Yep, we are going to make a recipe from The Cat Who Cookbook. Now my big sister blog TheCatWhoWroteaBlog usually does this with all the recipes in one post. I perfer doing one at a time so I won’t be reposting the whole thing.

Ingredients:

  • 6 Large Eggs
  • 6 Tablespoons of Sour Cream
  • 1 Tablespoon of All-Purpose Flour
  • 1/4 Teaspoon of Salt
  • 1/8 Teaspoon of Pepper
  • 1/2 Teaspoon of Fresh Chives
  • Butter
  • Sour Cream and Chives for garnish (optional)

Directions:

  1. Preheat the oven at 400°.
  2. Whisk the eggs in a mixing bowl.
  3. Add in the sour cream, flour, salt, pepper, and chives. Whisk briskly.
  4. Pour into a 1-quart buttered baking ramekin (if you don’t have a ramekin use a 1-quart round dish that can be placed in the oven).
  5. Bake for 15-18 minutes or until eggs reach preferred degree of doneness.
  6. Garnish with a dollop of sour cream and an extra sprinkle of chives if desired. Serves 2-4.

The egg was very good, and we all enjoyed it as a breakfast or dinner food.

It says it serves 2-4, but unless you have multiple side dishes it really serves 2. If you have more people, I would think of preparing two dishes or doubling the recipe. But very cheap and easy to make.
